These were very easy to make and really gorgeous once completed. However, this is definitely something you need to make just a couple of hours before serving. I made mine the day before my party and by the time my guests arrived, the chocolate was pulling away from the berries, and juice was leaking out onto the tray. I don't know if the warm chocolate slightly cooks the berries, or what, but although they tasted good, they didn't look very appetizing after they being stored in the fridge over night, and then brought to room temp. Will definitely make these again, but will be sure to serve them as soon as they are set!

This is my favorite dessert- it's even semi healthy (well, ok, but not as bad for you as chololate cake!

the chocolate covered strawberries were great, the only problem i had when making them was when i set the strawberries down onto the parchment the chocolate seemed to drip off. holding the strawberries over the pot keeps the chocolate from dripping everywhere
