Ingredients

  • 1 eggplant, sliced into 10 (1/4-inch) thick slices

I could not find burrata mozzarella so I use fresh buffalo mozzarella. The recipe is so quick and easy and was a big hit. I will make it again for a party.

I tried this recipe a week before I intended to use it for my guests just to see if it was as good as it sounded and looked. I was amazed and have used this recipe twice after with only the best compliments I have ever received. I have given this recipe to my friends and family only to get thank you notes from them later after they served it to their guests as well.
