Ingredients
- 3 pounds cooked lobster meat, picked over for shells and chopped
- 1/2 cup celery, finely chopped
- 1/2 cup red onion, finely chopped
- 3/4 cup mayonnaise, light or regular
- 1/4 cup lemon zest
- Salt and pepper
- 1 fresh baguette, white or whole-wheat
- 1/2 cup olive oil
- 1 bunch fresh chervil
Directions
Preheat the oven to 350 degrees F.
Mix the lobster meat, celery, red onion, mayonnaise, lemon zest and salt and pepper, to taste. Reserve in the refrigerator. Cut the baguette into thin 1/4-inch slices. Lay out on a sheet pan and bake at 350 degrees F until lightly browned. When the bread is cool, spoon a generous amount of the lobster salad onto the baguette and garnish with a chervil sprig.

Great recipe for leftover lobster. The lemon zest added a nice flavor.

This lobster salad was easy to prepare and quite good. I drizzled a smidgeon of truffle oil over the salad after it was on the baguette. For the reader who wants to know what to do with the olive oil - brush the baguettes with the olive oil before baking. I didn't measure out a 1/2 cup I just drizzled a little on each baguette.

My daughter made these as an appetizer for our Thanksgiving Day dinner this year (2005. Everyone was in agreement...they were wonderful! I was glad that none of the ingredients over powered the lobster. The only thing she did different was brush the slices of bread with butter instead of olive oil prior to toasting. A big hit all around. I'm definitely going to make these for our New Year's Eve party. (Note: She purchased fresh lobster from the grocery store and had them steam and lift from the shell for her.
