This lobster salad was easy to prepare and quite good. I drizzled a smidgeon of truffle oil over the salad after it was on the baguette. For the reader who wants to know what to do with the olive oil - brush the baguettes with the olive oil before baking. I didn't measure out a 1/2 cup I just drizzled a little on each baguette.

My daughter made these as an appetizer for our Thanksgiving Day dinner this year (2005. Everyone was in agreement...they were wonderful! I was glad that none of the ingredients over powered the lobster. The only thing she did different was brush the slices of bread with butter instead of olive oil prior to toasting. A big hit all around. I'm definitely going to make these for our New Year's Eve party. (Note: She purchased fresh lobster from the grocery store and had them steam and lift from the shell for her.
