Ingredients

  • 4 cups Parmesan cheese, coarsely grated

Directions

Preheat the oven to 350 degrees F. Heavily grease a cookie sheet (parchment paper is optional, but if using parchment, make sure it is heavily greased). Sprinkle the coarsely grated Parmesan cheese into a 5 inch diameter circle. Make sure there is just enough to cover the area thinly, don't over do it! Place in the oven and bake for approximately 8 minutes, or until golden brown. Remove the cheese pancakes from the sheet pan and quickly place them over a rolling pin to shape them and allow them to cool. Be extremely gentle with them...they are very brittle when cool. Repeat with remaining cheese.

    I've done this with Sharp Cheddar - especially works well with Sargento's fine shreds. In the frying pan or the oven, a side benefit is that a lot of the excess oil separates, making these more healthful. Rather than making the larger circles and bending over a rolling pin, I make smaller circles for flat "crackers". If done in the frying pan, I cover the bottom of the pan to saute until slightly crispy. I lift out and drain on paper towel, then breaking into bits and pieces and use in place of croutons in a salad. It's possible to combine with bits of bacon for extra flavor.

    These are easier than you might think. If using finely grated parmesan you can cook for 5-6 minutes. I didn't grease the parchment paper and they turned out just fine.
