Black-Eyed Pea Salad

Ingredients
  • 1 large tomato, diced
  • 1/2 medium red onion, finely chopped
  • 1 small red bell pepper, finely chopped
  • 1 jalapeno, finely chopped
  • 2 tablespoons chopped green onions
  • 2 tablespoons chopped fresh parsley leaves
  • 1/4 cup unseasoned rice wine vinegar
  • 1/4 cup canola oil
  • 1/2 teaspoon sugar
  • Salt and freshly ground black pepper
  • 2 (15-ounce) cans black-eyed peas, drained
Directions

Combine the first 6 ingredients in a bowl.

In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.

Toss all together and let marinate for at up to 8 hours in the refrigerator before serving.

I have been making this recipe for the last two years. I love black eye peas cold or hot. This is a great recipe. I went to a restaurant in FIDI in NYC. I walked in and it was on the menu as Black-Eyed Pea Salsa - Texas caviar with homemade chips, the chips are Tortilla Chips. To say the least, I still make my own it is just cheaper. I prepared this recipe for my Sunday dinner – was great! The next day for breakfast I felt like an omelet – did not feel like chopping onions or anything. I reached in the fridge for eggs and saw the Pea Salad – Guess what! I saw the episode where this was prepared and decided to make it for our annual beginning of summer BBQ. I'm a memphian, & am proud of you guys! I was born in the south, and hated black eyed peas as a kid - but I discovered I LOVE them as an adult! I usually eat them hot, on greens and/or cornbread, in true southern fashion, but when I saw this on the Neely's show, I realized my family used to make this... I tried it out for a party, and people ate it like a salsa, on pita chips (non-southerners)...it was great that way, but for me, it's a side dish, and a great packable lunch. It's also now my picnic, barbeque and potluck staple -- I can make it the night before, never have to worry about anyone else showing up with the same thing and I have yet to get anything but rave reviews for it! I made this delicious salad last year for the first time after seeing it on the show. I have never been a black eyed pea eater--but the other ingredients of this salad were all things that I liked and that are great together. I absolutely loved it! You will not be disappointed! The flavors are so yummy! I will be making it again and again and find it is a nice and healthy side dish to have with steak. This was wonderful!!!! I did have to tweak it a bit. Add smoked flaked red peppers, pinch of oregano and garlic powder and white vinegar (no haberno, rice wine vingar, red onion) and a couple of extra green onions and some whole kernel corn (as one poster suggested). Saved half and served with chips,, the rest I served with collard greens and a smoked ham with honey cornbread. It is funny how 'an old made to eat veggie' or overplayed card trick can look so different with only just a bit of imagination...one rater said it 'was too hot'---do place in apple cidar vinegar, and regular bell pepper (instead of rice with jalapeno's, would be an example?) Most any family member can enjoy a salad such as this 1, if there are no major allergies as to their 'dislike,' if only with an addition or sub. The Neely's are such fun folks when you view their shows on the tube and have tasty treats by me. I made this for my husband, and he loves it! It's delicious just as it is, but I added sweet corn to the recipe, just for a little more sweetness. We also used wheat crackers to scoop it with and it's really tasty. It's also good with tortillas. I'll definitely make this again. We have an annual Super Bowl party at a relative's house every year and all who are invited are requested to bring a side and a dessert. I made this to take to a party for New Years Eve...it never did see midnight! Long gone before Baby New Years could make his appearance...so much for luck. My mistake was not doubling the recipe, and leaving some at home. My husband asked me to next time leave at least a small bowl full at home. I called this Texas Caviar, but this is over the top. I love Pat and Gina, especially Gina. Pat is my idea of a real man in that he seems to truly love her. I've been making this dish for a couple of years but my recipe has 1 can each of black beans and black eyed peas. It's great with fish, chicken and corn chip scoops so you can use it as a salad, dip or just plain snack food. This dish is ideal for hot summer boating, bbq's and family get togethers. I served this salad at our Memorial Day picnic an everybody LOVED it! It was lite, refreshing and so fresh tasting! I added a fresh squeeze of a lemon and chopped garlic (cause I love garlic) which added even more fresh flavors. The best thing about this salad is that it gets better with time.
