Black-Eyed Pea Salad

4 to 6 servings

  • 1 large tomato, diced
  • 1/2 medium red onion, finely chopped
  • 1 small red bell pepper, finely chopped
  • 1 jalapeno, finely chopped
  • 2 tablespoons chopped green onions
  • 2 tablespoons chopped fresh parsley leaves
  • 1/4 cup unseasoned rice wine vinegar
  • 1/4 cup canola oil
  • 1/2 teaspoon sugar
  • Salt and freshly ground black pepper
  • 2 (15-ounce) cans black-eyed peas, drained

Combine the first 6 ingredients in a bowl.

In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.

Toss all together and let marinate for at up to 8 hours in the refrigerator before serving.

    This recipe has been a summer staple in our house for a few years. Great dish! I even swap one can with black beans to change it up a bit sometimes and I do omit the sugar.
    It was Delicus and easy great for a snack and kids like it it was so good
    Delicious and EASY...especially when you get your hubby to chop the veggies! I took that page out of Gina's book, too! :-)

    Good, but omitted the sugar, green onions, and parsley. Added extra red onion, cilantro ,and the juice of one lime.
    I have been making this recipe for the last two years. I love black eye peas cold or hot. This is a great recipe. I went to a restaurant in FIDI in NYC. I walked in and it was on the menu as Black-Eyed Pea Salsa - Texas caviar with homemade chips, the chips are Tortilla Chips. To say the least, I still make my own it is just cheaper. Gina and Pat you have them on the flavor profile though. I am about to make for my church picnic, hoping they like it as much as I do.

    I love black eyed peas and I love this recipe! The vinegar taste is perfect. It's also very easy to put together and is a great summer "salad".
    Great recipe, perfect for summer picnics. Also great on top of salads. I add the juice of a lime for a little more punch.
    Followed the recipe to the 
    "T" and it turned out very well. My family loved it.
    Tasty & simple.. I added mint & cilantro which made a big difference. A splash of balsamic went well with it too. You can take a little and mix it up with some fresh greens for a fresher taste!
    I prefer cilantro in place of the parsley. Oh so yummy!
    I prepared this recipe for my Sunday dinner â?? was great! The next day for breakfast I felt like an omelet â?? did not feel like chopping onions or anything. I reached in the fridge for eggs and saw the Pea Salad â?? Guess what! I drained the excess liquid from the Pea salad â?? added a couple tablespoons to my eggs and - Voila!! - I had one of the best omelets I had ever eaten. This may be a recipe for a "leftover" show!
    awsome recipe especially for pot-lucks and picnics!! Everyone wants this recipe after they taste it! I do usually add an extra jalepeno and sometimes substitute cilantro for parsley

    this salad is excellent. definitly a great side dish to bring to a cook out. we used regular white vinegar because we didnt have rice vinegar, and i added fresh squeezed lime juice. and black olives halved. the lime juice took it over the top!!! lime juice is a must!
    This is a great recipe. It is perfect for that summer barbeque because it is light and yummy. Careful with that jalapeno though! Even with the jalapeno the sweetness of the vingarette makes it a delightul and tasty dish.
    I saw the episode where this was prepared and decided to make it for our annual beginning of summer BBQ. Being we are in the military and normally only southerns appreciate the blackeyed pea people inially turned their nose up at it; that is until they tried it and loved it. It makes a great cold side dish thats real esy to prepare for BBQs
    I used black beans, rather than black eyed peas, on this recipe simply because my husband and I aren't crazy about black eyed peas. Kept everything else the same and we really enjoyed this side dish. High in protein and low in calories!
    I make this dish every year for new years...I am making some for superbowl this year. It happens to be in Dallas this year and before the bad weather came we were able to enjoy some of the festivities.     5++++! I was looking for a salad recipe to go along with some brisket I had planned and I'm so glad I stumbled across this one! My guests raved about it and took the recipe home with them. The leftovers were even better the next day.

    I made this as a side but people ended up loving it as a dip with Scoops Tortilla chips. Grew up making something similar we called Southern Caviar.
    Made this for a cookout this summer, and it was such a huge hit, everybody wanted the recipe! People were afraid to try it at first, but it was one of the first things gone from the table. Empty bowl!
    I'm a memphian, & am proud of you guys! I've wanted to try this for a while, hate it took me this long, it was a hit at a b-day gathering to where I had to bring a dish, they had grilled foods, which this salad made a great pair with the spread. I added kernel corn for more color, and a for a little more kick, crushed red pepper flakes. They where asking for more!!! I felt sooo special. God Bless You Two, keep up the good work.
    This was so good. I could not believe black eye peas could taste like this. I plan to double the recipe next time. I took a bowl to my friend at work. She was so pleased that she asked for the web site, so she could prepare some for her family. Continue to handle the business.
    I made two salad black eyed peas and fried potatoe salad. The balck eyed peas won hands down. I liked the colors , taste bursting in my mouth, and hearing everyone enjoying the new found dish that I discovered.
