Ingredients
- 1/4 cup pure maple syrup
- 2 teaspoons freshly ground pepper
- 2 teaspoons whole grain mustard
- 1/2 pound bacon (about 10 slices)
Directions
Preheat the oven to 350 degrees F. Line a baking sheet with aluminum foil then a wire rack.
Whisk together the maple syrup, pepper, and mustard. Lay the bacon on the rack being careful not to overlap. Brush the bacon with the syrup mixture.
Put the baking sheet on the top rack of the oven and bake until golden and crisp, 18 to 20 minutes. Remove from the oven and let cool slightly before serving.

I like the idea of cooking bacon on a rack now. This will be my method of choice now. The bacon was tasty, however the texture was a bit gummy/chewy. I will work on it and see if maybe a thinner or different syrup might help. Also, I will use whole grain mustard next time instead of yellow mustard. But, overall good.

The flavor was great, but the drippings burned and made my kitchen very smoky. Next time, I will brush the maple syrup-mustard mixture for just the last few minutes.
