Ingredients
  • 1 (3/4 pound) boneless skinless chicken breast
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons butter
  • 1 clove garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 tablespoon all-purpose flour, plus more for work surface
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan
  • 1 (16-ounce) ball pizza dough, store-bought
  • 2 cups baby spinach, well washed and dried
  • 1 cup grape tomatoes, red and yellow
  • 1 cup grated mozzarella
  • Olive oil, for brushing crust
Directions

Preheat the oven to 375 degrees F. Adjust racks to the middle of the oven. Put pizza stone in the oven to preheat while you begin the sauce.

Preheat a grill pan over medium heat.

Season the chicken with salt and pepper, to taste. Put the chicken on the grill pan and grill until cooked through. Remove to a cutting board and dice. Set aside.

Melt the butter in a medium-sized saucepan over medium heat. Add the garlic and red pepper flakes and cook until fragrant. Add the flour and cook until light blonde in color. Whisk in the cream, reduce the heat to low, and let simmer until thickened, about 2 minutes. Stir in Parmesan and season lightly with salt and pepper, to taste.

Flour your work surface and roll the pizza dough into a 13-inch diameter. Carefully remove the pizza stone from the oven and put the dough on top. Ladle the sauce to cover the bottom of the pizza. Evenly top with the baby spinach, grape tomatoes, grilled chicken and the mozzarella. Brush the edge of the crust with olive oil and season with salt and pepper, to taste. Bake the pizza until crisp and golden, about 25 minutes. Remove from oven and immediately top with another handful of spinach. Slice and serve.

Really tasty! I'm not a fan of Alfredo, but I decided to make this because my boyfriend loves chicken alfredo so much. It was actually really good! Great flavor and super rich sauce. item not reviewed by moderator and published
I loved the pizza. I also cut the tomatoes in half like voodoo30 did. Worked out very well. I also spread a little butter on the outside dough with a couple pinches of salt a pepper. It made an excellent crust. I will definitely make this pizza again. Thanks Patrick and Gina Neely! item not reviewed by moderator and published
Delicious - I would suggest cutting the tomatoes in half so they don't explode in the oven or when you bite into them, but otherwise this is an excellent recipe! Way to go Neely's! item not reviewed by moderator and published
This was a great pizza. I liked the alfredo sauce. I think I over cooked the chicken because it got a little tough as it baked on the pizza. I added black olives and fresh basil. Was very good. item not reviewed by moderator and published
This was awesome! I sprinkled Italian seasoning on the chicken breast and grilled in a grill pan. I only used 1 cup of spinach but it wilted down so much I will use 2 cups called for next time. I also used Asiago instead of Parmesan. My husband and I snarfed the whole thing down in one sitting, not proud of that, but it was THAT GOOD!!!! item not reviewed by moderator and published
So good and had lots of flavor. I love that it has vegetables so I don't feel so guilty about eating pizza. My husband loved it too. item not reviewed by moderator and published
I like this recipe very much! Watch the pepper flakes especially if they are homemade. I found you can substitute the heavy cream with skim milk. It makes a little bit healthier. Also, I use the alfredo sauce for pasta too. Overall, everyone who I make this for seem to enjoy. item not reviewed by moderator and published
this was just o.k... found it to be a bit flavorless/bland.. added bacon to it. might try it again.. item not reviewed by moderator and published
I add mushrooms and bacon to this recipe. I also use pizza yeast so I can bake it all at the same time. It is delicious and just a tad spicy. This is a favorite in our house. All our friends and family love it! item not reviewed by moderator and published
