Ingredients
  • 1 (3/4 pound) boneless skinless chicken breast
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons butter
  • 1 clove garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 tablespoon all-purpose flour, plus more for work surface
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan
  • 1 (16-ounce) ball pizza dough, store-bought
  • 2 cups baby spinach, well washed and dried
  • 1 cup grape tomatoes, red and yellow
  • 1 cup grated mozzarella
  • Olive oil, for brushing crust

Preheat the oven to 375 degrees F. Adjust racks to the middle of the oven. Put pizza stone in the oven to preheat while you begin the sauce.

Preheat a grill pan over medium heat.

Season the chicken with salt and pepper, to taste. Put the chicken on the grill pan and grill until cooked through. Remove to a cutting board and dice. Set aside.

Melt the butter in a medium-sized saucepan over medium heat. Add the garlic and red pepper flakes and cook until fragrant. Add the flour and cook until light blonde in color. Whisk in the cream, reduce the heat to low, and let simmer until thickened, about 2 minutes. Stir in Parmesan and season lightly with salt and pepper, to taste.

Flour your work surface and roll the pizza dough into a 13-inch diameter. Carefully remove the pizza stone from the oven and put the dough on top. Ladle the sauce to cover the bottom of the pizza. Evenly top with the baby spinach, grape tomatoes, grilled chicken and the mozzarella. Brush the edge of the crust with olive oil and season with salt and pepper, to taste. Bake the pizza until crisp and golden, about 25 minutes. Remove from oven and immediately top with another handful of spinach. Slice and serve.

This was awesome! I sprinkled Italian seasoning on the chicken breast and grilled in a grill pan. I only used 1 cup of spinach but it wilted down so much I will use 2 cups called for next time. I like this recipe very much! Watch the pepper flakes especially if they are homemade. I found you can substitute the heavy cream with skim milk. It makes a little bit healthier. RUN, don't walk to your kitchen to make this recipe! It is SO easy and SO delicious! The only thing we changed was my husband grilled the chicken breast outside and we added some bacon. I used the canned Pillsbury pizza dough as well. This recipe is PHENOMENAL and definitely a keeper! I can't wait to make this again! OMG! The best pizza ever!! The alfredo sauce is so delicious (it was spicy so add whatever amount of red pepper flakes you're ok with, I'm gonna keep the recipe to use it as a pasta sauce as well. I used the Pillsbury pizza dough in a can and prebaked it for 5 mins at the temperature on the can. I also added red onion and red bell pepper as toppings. After I added toppings, it baked at the same temperature on the can for about 15 mins or until it was nice and brown on the edges. This is a great pizza. My family loved it. My son ate it like it was going out of style, as did my husband. It made for a perfect friday night dinner! I didn't add the pepper flake simply b/c I ran out of it. I actually used the last of it when I made pats chicken broccoli stir fry (which is also awesome BTW) But other then that everything else was the same. My 20something daughter came home for a visit and a horde of hungry young adults showed up for the evening. I doubled the recipe and made two half sheet pizzas (made my own crust with the Fleischman yeast for pizza which is ridiculously easy). The only change I made to the recipe was to marinate the chicken breast overnight in bottled lemon-garlic marinade, I can't stand bland grilled chicken. Otherwise proceeded just as posted and the pizza was fantastic. It was gobbled up as fast as it came out of the oven. Made this for my family and boyfriend last night for dinner. Everyone loved it! The alfredo sauce is delicious and so simple to make - I'll definitely be using it separately on pasta. I like things spicy and full of heat and flavor, so the red pepper was a nice touch, but those who don't prefer it should probably cut the amount in half, or even in quarters, because it was a lot. I used pillbury original pizza crust, and pre-baked it for 5 minutes @ 425 so the pizza wouldn't be soggy with all of the toppings and heavy sauce. After I added all of the toppings (including the extra cheese I decided to throw in), I continued to bake it at 425 for another 15 minutes, and it was perfectly done. This pizza is great, and I'm not a big fan of chicken. I used whole milk instead of the cream, and it worked perfectly. It's a good way to trim some fat, but I'm sure it's great with cream too. You HAVE to try this! The alfredo sauce is to die for. You will never want another alfredo sauce after this. I did only use 1/2 t. pepper flakes, and it was plenty spicy. I also substituted canned spinach (squeeze out really well in a kitchen towel) and I used roasted red peppers instead of tomatoes. BACON!! I thought the recipe as is looked great, but I knew when i saw the combo of ingredients it that I wanted to add this, and boy, was it yummy! I did cut the crushed red in half because a couple of people eating this aren't big fans of heat. I like heat in my food, but even so, I think I might cut it back to 1/4 teaspoon next time, because I thought it detracted from the pizza more than it added. Somehow it just seemed at odds with the other ingredients to me. Weird. I also think that next time I make it (and I will), I'll take time to marinate the chicken somehow beforehand, just to give it a little more somethin' somethin'. I found I wanted more out of it than just plain grilling. I made this pizza with broccoli instead of the spinach and tomatoes. My whole family loved it. I partially cooked the broccoli in the microwave and followed the recipe exactly otherwise. This was really good except yhe dough wasn't cooked through. By the time we realized that the pizza stone was out of the oven and the pizza was on a cutting board and my husband had started cutting it. I looked up my other pizza recipes and they all say to cook at 425 or above. My husban suggested we try to salvage it tonight by heating it up in a fry pan. I could not resist making this pizza immediately over the weekend despite lacking one ingredient (the baby spinach). I used leftover grilled chicken and out of necessity substituted fresh chopped basil for the spinach, and still, it came out wonderful. The presentation is gorgeous, gorgeous enough for guests. The sauce is simple and yet so creamy delicious. I generally steer clear of spicy and hot seasonings, but the red pepper flakes add such a pleasant kick, you've gotta try it. The tomatoes lend a perfect sweetness to balance out the heat. I made this three days ago and I'm already (still) craving more. Next time I'll double the recipe and make two pies.
