Hello
I spent the day in bed watching tv and started with Food Network. I've been traveling quite a bit and needed to go to the grocery and this recipe inspired my Sunday cooking!
Sadly, my grocery didn't have poblano peppers this week, so I went cubanelle and wanted just a bit more in the stew so I added a can of black beans, might do 2 next time and a little less potato, and a can of diced tomatoes.
Otherwise, I was true to the recipe. As I've taught my baby nephew, except when baking, the recipe is just a guideline....make it your own.
It is YUMMY!!! Thanks for getting me to the grocery and cooking this weekend to have a fridge with lunch this week.
