The dip was delicious but not the best on potatoes. I added more of the chipotle for my own preference to make it spicy and to taste less of the sour cream. I think it would be great on burritos or as a mayonnaise on a good southwestern burger!

The dip as prepared according to the recipe tasted too much like sour cream. I ended up adding a little bit of powdered ranch dip mix - maybe 3 tablespoons - then it was too ranchy. I added some low fat mayo - to keep it light, and a little more of the sauce from the pepper can and it was better. I think next time 1/2 light sour cream and 1/2 light mayo would be perfect without the ranch (hopefully. Overall after tweaking a bit it was very good.
