I do quite a bit of baking (including bundt recipes so I thought I would try something new for my Mom's birthday.... I was so disappointed in the result, first of all I took it out 12 minutes "early" and it was definately done... and when we cut into it later, I realized it was way overdone... the most dry cake I have ever made :( I cannot fathom what it would have looked like if I baked it the full time. Not one person even ate the piece I cut, and I threw the rest of the cake away. I have going back over the recipe wondering if I missed something but it appears I did everything as directed

This my 3rd time to make this awesome cake! My husband is not a sweet eater but, he raves about this cake. Everyone loves it. Thanks so much Pat and Gina for sharing. Y'all have taught me so much!! :~

Easy. This is really a Coconut POUND cake. I made homemade coconut ice cream to serve with it. I omitted the glaze and just sprinkled confectioners sugar on top for ease. I also cut the sugar down by 1/4 cup per reviewers suggestions and added unsweetened coconut to the batter, didn't need sweetened coconut. This only needed 50 mins to bake as others have said. Definitely check the cake in about 50 mins time. Came out of bundt pan easily, but you MUST generously grease the pan first.

I made this cake today to try out my new bundt pan that I just got yesterday. It was my first ever bundt cake, and I must say it was a great success : It is extremely soft and tender, nicely moist, and the subtle flavor of coconut is very pleasant and sophisticated. I reduced sugar by 1/2 cup (used only 2 cups, and the cake is still very sweet, one more quarter cup could be done away with easily. Like some other reviewers suggested, I put coconut flakes into the batter, and it was a nice addition. I also skipped the sugar glaze (never been a fan of those, and instead drizzled the cake with some homemade blackberry and lime syrup. And the cake baked perfectly through in 1 hr 10 mins, just like in the recipe! Not dry, not raw, perfect golden color on all sides, and just jumps out of the pan easily! Very good recipe, and easy to make. Will make again.

I made the coconut bunt cake for Easter Sunday Dinner. It was absolutely delicious! I received great reviews from my family. Only one negative comment; which was I should have two instead of one.

I read all the reviews and I realised that I should bake this cake up to 50 mins and test to see if it was done, which it was. I dont know why this recipe calls for it to be baked for 20 more mins. If this is how you baked this cake and it came out dry then I say try again, but bake for 50 mins. I too made some changes to this recipe. I added coconut to the batter and instead of pineapple I did a chocolate ganache glaze with added coconut extract and topped with toasted almond slivers and coconut. It was FANTASTIC...
