5 stars!!!! I followed the recipe to the tee (I am not good at improvising!! and it was soooo easy and it was absolutely delicious! I did find it finished baking in 50 minutes tho. Other than that, I would not change a thing!!!!!

Thanks to the other reviewers for their terrific advice. I made it today for a Superbowl party and it was a huge hit! I took it out after 50 minutes and it was done; I added the extra tablespoon of coconut extract; and I added a half cup of the flaked coconut to the batter. I did one extra thing - instead of cooking spray (I did spray the pan but had to wash it out because it smelled stale I used coconut oil and then floured it. It gave a nice taste.

I had a few pieces that stuck to the pan,, but I think I need a new bundt pan - mine has seen better days. I will try this recipe again as soon as I get a new one. It's a keeper!

I always read the reviews before I try a recipe and I would like to thank the reviewers who said to: 1check the cake at 50 minutes and 2add an extra tablespoon coconut extract to the batter. Otherwise the cake would have been dry and not have much of a coconut flavor. I also threw the 1/2 cup flaked coconut into the batter. For the glaze, I used the leftover coconut milk instead of the pineapple juice, added a teaspoon of coconut extract and some coconut rum to bring it to the right consistency. The cake was delicious, moist, not too sweet. By the way, I used a baking spray with flour. Did not have a problem with the cake sticking.

This was perfect. Moist, not too sweet, and a little hint of coconut. I did not use the pinapple glaze. I mixed some flake coconut with vanilla frosting a drizzles it on top to give it an extra boost of coconut.

Easy to prepare, this cake was a WINNER with my boys!!!!! The cake came out light, moist and fluffy. My only problem was the glaze it came out too thin (my fault!,I had cut back on the sugar (after reading previous reviews. I also used a Pinneapple and coconut juice from Dole (which gave the glaze a good flavor. I will try this cake again!!!
Thanks Pat and Gina for yet another GREAT recipe!!!!!!

I made this cake on Christmas Eve and served it on Christmas Day. My entire family really enjoyed the cake. The icing was not too sweet and complimented the cake perfectly. Cake was very moist and absolutely delicious! Previously I read the reviews so I actually oiled the tube cake pan with oil and used a cooking spray with flour - and guess what? I had no sticking! And like the reviews stated the cake actually cooked in 50 min....I plan to make this cake again! This is a keeper! Big thanks to the Neelys

The cake was very good but I gave it four stars because it needs some adjustments and the cake stuck to my pan. Twice! Iv'e made lots of cakes but this one stuck no matter what I did. It's very moist and the taste is just right. Except for the glaze. I tried it the first time following the directions. The glaze was way to sweet. So I cut the powdered sugar to one cup. And used the remainder of coconut milk AND pineapple juice. I eyeballed it and tasted it until it was just right. I think next time I will add crused pineapple. Not sure what to say about the cake sticking to my pan twice. But the taste is well worth the "ugly" cake.

I so looked forward to making this cake as I love coconut. I was extremely disappointed. The cake was very dry and no flavor at all. The glaze tasted like perfume, not pineapple. Will not make this cake again and I did exactly what the recipe stated step by step.
