    This cake is moist and extremely tasty! If you don't like it sweet, then just don't add icing. Delicious!

    I made this cake today for my dad who is always complaining about me making box cakes. It was his birthday and I wanted to make his favorite cake. "Coconut cake". He loved it.........we all loved it. It was moist and rich. Thank you. I will definitely make this cake again.

    This cake is delicious! I am making it as one of my 3 wedding cakes (I am making my own and I will simply dust with icing sugar and put flowers in the hole. Thanks for sharing!

    This cake was FABULOUS! It was moist and sweet, with a hint of coconut, and my FAMMILY went CRAZY! Thank you, Neelys! I will be making this cake again.

    I baked the cake for my family and they thought iit was great especially my mother. For the drizzle I also used the coconut milk and powered sugar along with the same flavorings for the cake as one reviewer stated because my husband does not like flaked coconut. It was a hit. Thanks.

    This is one of the BEST recipes that I have ever gotten from foodnetwork.com! This cake is moist and delicious. Not overly sweet, just right! I made the cake exactly as the recipe stated but I did follow the advice of some of the other reviewers and started watching it after 45 mins. It was done at 50 mins. Instead of the pineapple glaze, I made a glaze using 2 c. powdered sugar, the rest of the coconut milk and 1 tsp. of coconut extract. I then sprinkled it with the flaked coconut, as directed. It made this cake! It was, by far, one of the best coconut cakes I have ever tasted! My 15 year old son, who has NEVER liked coconut, loved it! Next time I may be brave enough to try it with the pineapple glaze. This cake is definitely worth trying and it is a keeper for sure!!! Thanks, Gina & Pat! You both rock!!! :

    This recipe was very easy, I made a few changes. I couldn't find unsweetened coconut milk so I used sweetened milk , and I used 2 teaspoons of coconut extract. I added coconut milk in the pineapple glaze. I shared the cake with my friends and they LOVED it. Thanks for giving us a great cake for after Sunday dinner.

    Cake was very moist and good. A little bit of mine stuck to the pan when I took it out, but I just realized that that could be due to the fact that I used a whole can of coconut milk instead of a cup. Suprised that it turned out with my mistake of using the whole can. Maybe that actually made it better, because it was very moist. I also only baked for 57 minutes and used shredded coconut instead of flakes.
