    I wasn't sure if I would like coconut cake, never having had it before, so I tried this recipe, and boy was I pleasantly surprised! I did make some adjustments though: I'm not a big sweets fan, so I cut back the sugar in the cake to 2-1/4 cups. That made the cake itself the perfect amount of sweet for me - not too cloying. I also doubled the fresh coconut amount to 1 cup, toasted it, and added 1/2 cup into the batter for more coconut-y flavor. I wasn't too thrilled about the glaze [again, too sweet for me], so I made a butter-cream cheese frosting with powdered sugar and orange juice [I got the wrong juice at the market, silly me]. The cake itself rose up beautifully, and was a bit dense, but very moist and baked all the way through. Not as much coconut flavor as I thought, but still very tasty. I frosted it with the cream cheese frosting which was still soft enough to run down the sides, and topped it with the remaining toasted coconut. Man, was it good! I'll definitely be making this one again. Thank you Neelys.

    I agree with Ingrid on the consistency. It was very dense and had a strange texture. Instead of using the pinapple icing, I opted for a lemon glaze. I really liked the flavor but am not sure if I would make it again.

    This cake is delicious. I truly enjoy the show, it is a positive spin on a black couple working together, keep the good work up. If I ever get to Tenn, I will good you guys up.

    I dont know but i had no complaints on this recipe....it was SUPER moist, easy to make, had a perfect coconut flavor and the icing was a great compliment! I will be keeping this recipe!

    I made this cake a week ago and it was a huge hit!!!! Soft, moist and flavorful.. I did however added an extra tablespoon of coconut extract just because I'm a huge coconut lover. Also, I only baked it for 35-40min max. A couple of friends called me trying to get the recipe from me... Will make this cake again...

    This cake does not taste anything like coconut, however, it is moist but more like a butter or pound cake. Wayyy wayyy too much glaze. I used one quarter the ingredients and thinned with coconut rum as others have done. Much better. I also toasted the coconut to try to get more of that flavor into the dessert. Not sure I would try this again. Also, beware. PAM your pan heavily. This cake sticks.

    The recipe sounds wonderful....can't wait to try it. I can't find unsweetened coconut milk. What can I substitute for it? Would like an answer as soon as possible 'cause am planning to make it for a church dinner this weekend.

    This cake was soooooo good! I let it sit for one day so the flavors could blend together. I also added coconut rum to the glaze instead of pineapple juice. I also topped it with toasted coconut. The cake was gone in one day.
