    Best Coconut cream pie I have ever made and the easiest too! I used a coconut cookie for the crust instead of the ginger snaps and also I substituted half of the Vanilla extract with coconut and everyone loved it so much that I had to make a pie for everyone that tried it!

    This pie was incredible!!!! Made the night before and refrigerated overnight! Perfect
    Doubled it bc I had crushed a pd of gingersnaps. Everyone raved!!! Thx!
    Added some crushed gingersnap mixture to toasted coconut to top whipped cream, yum!

    I did make a couple "tweeks" I added a little Coconut Rum to the pie filling and also extra coconut. Came out great!!

    I loved everything about this recipe except the gingersnap crust, but that is just a matter of taste. I'll probably use this recipe again, but just stick with a traditional crust.

    I made this for Thanksgiving and evertyone loved it! Very easy to make and set up beautifully.I never had it w/ the gingersnap crust but it really added to the coconut cream without over powering it, it created a nice balance.

    Excellent crust!! I was skeptical about making the gingersnap crust, but it is a must-have. The custard was not fabulous, but good.

    This pie was mmmh mmh good!!....it was super easy to make and although i couldn't wait 2 hours for it to set so I put it in the freezer for half an hour and it still came GREAT!!!
