What I liked about this coconut pie was that it wasn't painfully sweet as many of the other American desserts (FYI, I'm Japanese. For some reason, the texture of the filling felt a bit too Jell-O-ish on the first day, but it became creamier as the days went by. Although it was not mind-blowing, I liked it.

This pie was incredible!!!! Best on the planet!!!!
Made the night before and refrigerated overnight! Perfect
Doubled it bc I had crushed a pd of gingersnaps. Everyone raved!!! Thx!
Added some crushed gingersnap mixture to toasted coconut to top fresh whipped cream, yum!

I mean this is the best coconut pie I have ever had, everyone loves this when I make it, girls given me all kinds of love when I feed them this.

Love this recipe, for the filling! I bake my own molasses cookies, and it wouldn't be right to use them for a crust! But this filling is the best I've ever tasted. Have made this twice in a week because my husband just adores this! And I use Cool Whip instead of whipping cream, and that just isn't something I do, but it all sets better with Cool Whip. LOVE this pie!

I loved everything about this recipe except the gingersnap crust, but that is just a matter of taste. I'll probably use this recipe again, but just stick with a traditional crust.

This was very tasty and also very easy. The Neely's always give great directions as well. Next time, I would not use the gingersnap crust.....too sweet and to me detracts from the pure coconut flavor. I'd prefer a regular crust. I also used coconut extract instead of vanilla for an extra coconutty boost. The pie fit well in my deep dish pie tin, however don't let not having one stop you.......it would have fit in a regular pie tin as well. Thanks guys!

Best Coconut cream pie I have ever made and the easiest too! I used a coconut cookie for the crust instead of the ginger snaps and also I substituted half of the Vanilla extract with coconut and everyone loved it so much that I had to make a pie for everyone that tried it!

I did make a couple "tweeks" I added a little Coconut Rum to the pie filling and also extra coconut. Came out great!!

The crust is amazing - made it for Christmas and have had requests to make it again! So tonight it is!
