    I substituted 4 cups of brown rice instead of white rice to increase nutrition, and used 2% Sharp Cheddar Cheese. I let the casserole sit for 1/2 hour before baking to let the dense brown rice soak up the liquid. I served it with roasted asparagus that I cooked in a separate dish for the same cooking time. I could have wrapped the asparagus in proscuito, but didn't have any on hand. Family liked it! Cheesy comfort food, but healthy, so I liked it, too.

    Made it with Zatarain's yellow rice and I did not have to add the salt and pepper and my children LOVED IT!! Served it with garlic buttered french bread.

    Saw this today and had to make it. I saw that Gina used a white cheese, so I used extra sharp white cheddar. The fresh herbs give this such an awesome flavor. Served this with broiled tilapia. I really enjoy the show and seeing 2 people that get along so well. Keep it up!

    I saw this recipe on your show and had to make it immediately. It is out of this world! I think it would also be good using collards or any other favorite green.
