We loved it. I did add some of the beer. Had to add more flour because of the altitude. I want to know if I can freeze it?

I've made this a couple of times now, and it always seems too thick and cheesy, even for my cheese lovers. I sub chicken broth for the beer, and always add or want to more broth so it's not so pasty in texture and the leftovers only thicken up more. I'm moving on...

I omitted the beer because I didn't have any so I used more chicken broth and it turned out GREAT. So easy to make and everyone loved it. Very flavorful.

Wow!!! and I thought that Bob Evans Restaurant's cheesy potato soup was good, Holy Cow! was this fantastic! The only thing I left out was the beer, since I don't like it. It was easy, full of flavor and as Guy would say "Money!"

Fabulous winter meal! I used 2/3 of the amount of beer it called for and loved the beer flavor! Mine was a bit thin, but I did not puree it. Delicious flavor, quick, and relatively inexpensive. Could easily freeze and I also tripled the recipe! Yum!

This is a great base soup. This is what we did... skim milk instead of whole, 1/2 cup evaporated milk, no beer, used 1/2 cup of velveeta instead of cheddar. The rest of the recipe was followed as written. As it was, FANTASTIC. I am glad we skipped the beer b/c I am certain it would have been too powerful. I really think it would have been too cheesy with two cups of cheese. We will make this again with the adjustments.
