I've never made a potato soup and so I was somewhat intimidated going into it. This recipe was so easy to prepare and make. I didn't have an emulsifier, so I left mine chunky like some of the other reviewers mentioned. My husband and I both agreed that is was excellent. I think I'll make a bigger batch and freeze some for a quick work-night meal.

This is an awesome soup! I used the recipe as a base and made a few changes. I used a 16oz can of beer so decreased the chicken broth to 1 can. Used skim milk instead of whole and only about half the amount of cheese. I was still very rich and tasty. Also doubled the potatoes and added some leftover ham from Thanksgiving. I opted not to blend the soup and kept it chunky. My kids loved it. I had read someone had issues with it becoming very thick after it was refrigerated, did not have that problem, it reheats wonderfully!

This dish is absolutely divine. It is a very economical meal, it's comforting on a comfort food day (I live in Portland, OR -- The only thing wrong with it (objectively is that it gets really solid when you store it, so you might want to serve all of it in one meal.

I followed others advice and used 1 cup more stock & eliminated the beer. The flavor was very good but I think I would have preferred to leave it chunky. I wasn't a fan of the mouth feel of the pureed soup. However, my family did not share the same objections. Added bonus of pureeing, my children did not see the cooked vegetables. I will definitely make this again. It is very filling and fits the bill for cold winter nights.

I followed the recipe *exactly* and am hugely disappointed with the results. The beer completely dominates the taste. I feel like I made beer soup with potatoes. Awful!

Easy and excellent! I followed every step as instructed and the soup was delicious. My husband is a non-drinker and didn't feel that the beer was too strong. Maybe the previous reviewer didn't simmer the soup long enough. I was going to use my food mill to cream the soup but my husband wanted it chunky so instead I used my potato masher and it worked just great! Much easier!

Its good, but next time i will omit the beer completely, i'm a beer drinker and in this situation it was way over powering. otherwise good with good texture.

AWESOME. This is by far the best soup recipe I've made. the beer added the great flavor, which left me wanting more after I was soooo full. I will definitely make this again. Kudos to the Neelys.

My husband loved this soup. The beer is great in it. It gives it a different taste than the ones I've tasted before. I added cheese a little at a time because we didn't want it too cheesy. The soup thickens up with time so at the end it was creamy. I left some potatoes in little pieces. It was good and I will def make it again.
