The soup was good but a little bland. After reading the other reviewers suggestions, I used 1 cup of beer instead of the whole bottle. I am glad I did because otherwise I think it would have overpowered the soup. I might add some extra seasoning if I make it again or stir in some sour cream.

I love this soup! I have tweaked it over time, I use skim milk, more broth and less cheese. The soup with that much cheese can taste like it's cheese soup.

Great recipe! This is my second dish by the Neely's (I also made the keep your man chicken and they both turned out excellent! This recipe was not difficult at all and did not take long to prep and make. Since I am the only one to eat soup in my home, I froze it in several zip lock bags (I measured about a cup in each bag so that I can easily thaw for lunch when I need it. I did make a slight change by eliminating beer. I dont like beer and I also used a corn starch slurry to help it thicken. Lastly, I only opted to use a 1/4 of cheese in the soup because I cannot tolerate all that cheese. I too onlu took 2cups of soup and blend so that could have the chunky potatoes in the soup. Outside of that this is an excellent recipe which I will make lots!

The best and easiest basic potato soup recipe I've found. There are no difficult ingredients and it tastes great. My 2 year old twins absolutely love this soup and I've started adding baby spinach to it when I add in the potatoes and my boys don't know the difference since it all gets blended up at the end anyway. Win-win for everyone! I've actually made this soup so many times I no longer need the recipe to remember it. It's become a staple in our house!

OMG! this recipe was so Delicious!! i doubled it [big family]
and also added shredded chicken breast and 2 cans of corn at the end.
the soup is so tasty! i think the next time i make it i will hold out some potatoes to accompany the chicken! i also melted more shredded cheese on top with sour cream instead of bacon! the corn and chicken def. added the soup!

If you're looking for a "cream of potato" soup this is not it. The broth only has one cup of milk, the rest is chicken stock and beer. That said: this is delicious!! You have a lot of freedom with this recipe to modify it as you see fit. I decided to cut up the four pieces of bacon and sautée it with the veggies because I wanted a stronger bacon flavor in the soup. I love beer and used a full bottle of Sam Adams Coastal Wheat. I didn't think it was over-powering, but if you aren't a huge beer fan you probably will want to cut back on the amount of beer added. I don't have an immersion blender so I reserved some of the potatoes and veggies before ladleing the soup into a standard blender. The Worcestershire sauce really adds to the flavor of the soup! This is perfect meal for watching football and think it would impress any guy who loves bacon or beer or loaded potatoes ;

I made this soup last night, following the recipe exactly except for the following: I used pepper jack cheese, maple bacon and removed some of the potatoes so it would be a little chunky. I didn't have any chives (OK, I had some in my garden but was too lazy to brave the wind and rain for them, but it didn't matter. It was delicious, easy to prepare and the ingredients were available. The only thing I had to go to the store for was the bacon. My husband loved it and I'll definitely be making it again. It's a recipe that can easily be tweaked for different flavors. Next time I might try adding roasted poblano peppers, jalapenos or corn to give it a Southwestern flavor. I highly recommend it.

I just made a grown up St. Patty's Day version of this soup that I'm in love with! Sub the beer for Guiness, add fresh parsley & chili flakes, blend the potatoes half way or only blend half of them, and then let sit in the slow cooker a couple hours before serving to help mellow out the beer flavor. I still garnished with bacon, etc. as recommended & received rave reviews! I haven't had a Neelys recipe steer me wrong yet!

My 14 year old daughter made this and followed the recipe exactly. It turned out great! Very easy and very tasty.
