I made this, but I didnt put the beer in and I blended the veggies, but not the potatos before I placed the flour in the pot. LOVED this soup. I will make this again...and again....and again!!!

My wife and I made this, we did not puree it, and we liked it with the potato and veggie chunks. The taste is fantastic, we recommend trying this recipe you will not be disappointed

I thought it was tasty however i will use less beer next time I feel the beer was a little over powering my son thought the same thing!

I've made a lot of "stuff" over the years and this is one of the very best. I was great without even adding cheese. We used garlic salt and 1/2 and 1/2. Awesome

Wow, excellent flavor!! Made this to it's specifications. I wouldn't change a thing. The dollop of sour cream, bacon and the chives were the co-stars in this dish.... a must add in my opinion.

I was skeptical of using the beer, but after reading a lot of the reviews I went with it. I'm glad that I did. This soup is amazing! I added diced grilled chicken since my husband is a meat and potato man. This recipe is definitely a keeper, Thanks Gina & Pat :

We used the drippings from the Neely's Holiday Ham that we hickory smoked on the grill to make a stock, then replaced the chicken stock in this recipe with the ham stock, which made the soup EXTREMELY flavorful! We chose to skip the puree step, and leave potatoes whole, but needed to use corn starch for a thicker base. We added bacon directly to the soup, and used Coors Light beer, and a bit of extra cheese.
Highly recommend this soup, and will definitely make it again and again!

This is seriously the most delicious, savory soup I have ever tasted. I keep making variations with the same basic ingredients. It's very good with potatoes left in chunks instead of blending. I also made a low fat version with 1% milk and I reduced the amount of cheese added to 1/2 cup. I did have to add a slurry of cornstarch to thicken it up a bit, but I never missed the fat...that beer just adds an amazing flavor! Thanks Neelys!

This soup is incredible! My boyfriend thought it was incredible and we had the tastiest, most satisfying winter meal. I used Presidente beer from Dominican Republic, super spicy boar's head cheddar w/ peppers, and nutritional bonus: I added half a head of cauliflower to the boiling and blended it all up! You could not tell with all the delicious flavors! This recipe is a definite keeper!

All I can say is amazing, easy and so good!! We live in Florida, had a cold snap and made this soup and it was so good, took the chill out of all of us!
