I loved this soup. I followed other reviews and only used half the beer and put in more stock instead. It was delicious. Next time I think I will leave some potato chunks in just to give it more texture.

I made it for the first time for my family. My in-laws and brother in-in law came over for the holidays. Everyone loved the flavor. I did add left over ham from Chfristmas. I also did not add the beer as I am not a fan of beer. The sour cream topped it off. I even forgot to add the cheese because everyone was starving and could not wait due to the smell.

This soup is really delicious. After eliminating a few things of course. I don't like using alcohol in my food. I don't care if you can taste it or not, I cook for kids as well and I don't like the taste of it so I eliminated the beer. Also, I didn't make the soup as creamy as they did. I used my blender to break up most of the veggies but left some potatoes because I like to bite into that texture.

This is a delicious potato soup! Only change I made was to cut the beer in half. It was easy and the entire family loved it!

I read the other reviews and cut the beer in 1/2. We like chunky potatos so I diced them small and left them. It was a HUGE hit!! My 9 yr old daughter asked for seconds! Definitely a keep in my recipes!!

This Loaded Potato Soup is so good! Bein' from the South I just had to add some crisp bacon in the soup...added some homemade biscuits & honey and some sweet tea...it sure warms your tummy on a cold night.

If I could give this soup 100 stars I would. My husband, daughter, and I loved this soup. It is a hearty soup that warms you up and fills your belly. Like others I did not use beer and just added an extra cup of chicken stock. I also added 2 extra carrots and an additional 1/2 of a celery stalk. And I also added the bacon grease to the dutch oven (I always oven bake my bacon and just a little butter to sautee the veggies. I did notice that it did take longer for them to soften but thats ok. I totally recommend this soup and am looking forward to enjoying it again tonight.

Wonderful!!! Easy & tasty. We enjoyed w/crusty bread. I boiled the carrots before adding them to soften them up.
