My boyfriend and I made this recipe last night, and all I can say is WOW! It tastes just like a loaded baked potato!
Per many reviews, we cooked the vegetables in bacon grease to add a little extra flavor. Halfway through, we also realized we didn't have any chicken stock. But according to a good chef I know, using water is an ideal replacement, especially in soups that are not broth-based. So that's what we did, and it turned out fantastic!
We also used half and half instead of milk and used 6 small red potatoes - I like the flavor better than russets.
With the sour cream, crumbled bacon, and chives, this recipe certainly lives up to it's name! And it's a wonderful cold-weather comfort food.
I'm not going to lie; I can't watch the Neelys because, honestly, the lovey-doveyness between them is sickening. But they've earned respect in my recipe book.

My family thought I was crazy to make potato soup for dinner. One bite of this soup changed their minds. Everyone absolutely loved the soup and there was not a drop left.

I signed up just to review this recipe. I made a few tiny adjustments like extra potatoes and using 1/2 cup half and half 1/2 cup milk and only 6 oz of beer but this soup is AMAZING!!! my fiancé and I both can't get enough... try it!!!! Beer included!

two thumbs up! i dont like beer, so i skipped that ingredient, and i didnt puree the soup, but it was still delicious and very flavorful! a definite keeper

Delicious!! I didnt have beer so instead of 3 cups of chicken broth I put in 4. I also didnt put in hot sauce or the worcestershire, I forgot, but it didn't need it. I will be making this again and again! :

Wow! I had so much fun making this soup and an even better time eating it : I did a trial run for my husband and I and I will surely be making this again to have something yummy on hand when company visits over the holidays. I don't think there is any one that wouldn't love this soup! I chose not to puree the soup - I like my potato soup with lots of texture. I also chose to skip the hot sauce and diced up green onions for the topping instead of chives...it's all a matter of personal taste and that's what's fun with recipes like this - you can make them what you like! Don't hesitate to make this soup...NOW!

I made this last night for company as a starter and they were disappointed that it wasn't the main course!! I too sauteed the veggies in bacon grease which really enhanced the flavor of the finished product. I also added some cayenne pepper and smoked paprika. TO DIE FOR!!! This is definitely a keeper.

Just finished making this soup and like many others, I sauted the veges in the bacon fat. I doubled the amount of potatoes and chicken stock because I have three very hungry teenagers. It's hard to please a family of five, but this soup was a HUGE hit with everyone. I will make this over and over. Thanks!

Let me just quote my 14 and 19 year old sons and my husband. OH MY GOD THAT IS GOOD! I made a double batch hoping it would go over well. Let's just say there was no left overs. I added a ham that I smoked yesterday. Also, I used busch light for the beer. But I can tell you this, I will be making this again! Thanks Pat and Gina!

Awesome, I also sauteed veggies in the bacon fat that I started with so I could top the soup, added tyme, a bay leaf and some onion powder, and a dash of poultry seasoning, I choppeed all veggies with my handy chopper to make them all the same size. I did not have an immersion blender so I used a strainer and strained out some potatoes and veggies and used a masher and put back into soup, I like texture as well so I did not use all the potatoes. Let it simmer for a while then added cheese at end. Try it you will love love love it....
