    Easy and delicious! I had some chicken stock and potatoes around, and this seemed like a good way to use them. I left out the beer (cuz i didn't have any *gasp* and i didn't have cheddar, so i substituted a half block of cream cheese that was in my fridge. Yummmy!! I may add some rosemary or thyme on my next go 'round.

    Made this last night for dinner and it was delicious. Almost tasted like the potato soup at Outback. I added extra potatoes and pureed have the potatoes so it was chunky. Also added some thyme for more flavor. Delicious!!!

    This was awesome receipe!!! Husband loved it! I also added lawry's salt and crushed red pepper. This had plenty flavor and to us did not taste bland at all! We luv flavor and spicy foods it was great!

    Added cayenne pepper and Lawry's salt but still rather bland for our taste. Perhaps the taste will be improved tomorrow. My DH would have preferred more meat in it.

    The soup was really good, the only thing I did different was use garlic powder I was out of garlic. The family loved it.

    The beer really makes this recipe special. I didn't blend the vegetables because I prefer a more rustic soup, and I added cubed ham.

    I too did not puree the soup.

    Family loved it. Great for a cold winter day.

    Very good soup. I chose not to puree the soup at the end since my wife likes a more chunky soup. It was awesome. I also cooked the vegtables in some of the bacon fat as well as the butter. Add extra pepper as well as crushed red pepper while cooking for a more spicy version. It really turned out great. Don't leave off the bacon, cheese or sour cream. It really brings the soup together...
