I don't usually make cupcakes. I was looking for something easy, quick, and good. These were very moist cupcakes.
I made some changes because I did not want all of that icing. In the batter I used a little fresh lemon and lemon extract instead of the vanilla extract. For the icing I just took confectioners sugar and mixed it with fresh lemon juice. You decide how thick you want it. I wanted a light glace. The result was very fresh tasting and did not clash with the banana flavor.

I made these cupcakes for friends that were coming over. I made cream cheese frosting instead of the molasses because I didn't have the molasses. I doubled the recipe and made 24 cupcakes. After reading other reviews I only cooked them for 18 minutes. They were delicious and moist! Not too sweet. They are between a banana bread & banana cupcake. I will definitely make these again!

If you don't want banana nut bread do what I did:
I used self-rising flour and omitted the baking powder. The result: amazing, light and moist cupcakes! Only thing is, they don't need 20 minutes to bake - more like 15-18. I also used platanos manzanos (the little baby bananas because the other ones at my grocery store were still a little green My family wiped them out quick!

I could smell the yummy goodness wafting from the oven!!! These are delicious and moist, definitely a keeper. I also had to subsitute vanilla yogurt in place of the sour cream. These are great, I will make them again!

They were good but I thought they were more like a banana nut bread muffin than a cupcake, which was what I was trying to avoid. Overall though they were very tasty.
