My husband and I love beets- the flavors of all the ingredients just go so well together. And it is so easy to prepare. Have made it with fresh beets as well as canned- good either way. Also, have added sliced red onions. Thanks for a great recipe

This was good. I used diced canned beets instead of fresh. The store was out of arugula so I used a spring mix. Since my husband and I love onion in our salad I added that as well. My husband wasn't a fan of beets but after eating this dish he fell in love and went back for seconds.

I haven't made this salad yet, but had one very similar at Stella's in Minneapolis and it was so good I savored every bite! I believe the beets in the restaurant salad were roasted, and that's how I will make this salad. Stella's also topped the salad with a 3" diameter, 1/2" thick slice of very lightly breaded and fried goat cheese rather than sprinkles. It was heaven! IF ANYONE CAN TELL ME HOW TO PREPARE GOAT CHEESE THAT WAY WITHOUT IT MELTING AND GETTING RUNNY, PLEASE RESPOND!!
P.S. To M from Allentown: It's about the food and The Neelys make some delicious, flavorful dishes. If you don't have anything good to say, please don't say anything at all.

I USED CANNED WHOLE BEETS AND SLICED THEM THICKLY. ALSO USED TOASTED PINE NUTS CUZ I LOVE THEM.

Tried this a few nights ago and my husband who loves all types of salads said this was the absolute best. The beets are a sweet kick to the tangy salad dressing.. I never liked beets as a child, but I eat them now! I used crumbled goat cheese covered in basil sprinkles and it was sooo good! I've never had a bad recipe from the Neelys... I love the show and feel like I'm watching my family cook together...

The ingredients were fresh and simple but with the balsamic vinegarette it was delicious. A winner in my book.
