This is delicious. If I cannot find Mexican style tomatoes, I just toss in some extra cumin and cilantro with a bit of anything else I have on hand.

It is super fast, and really good.

I have been making this for about a year, should have posted before this!

It was just ok. I cooked the chicken & then shredded it. We probably won't make it again, but I did use the leftover chicken the next day for chicken nachos.

Excellent! It is true that the soup is perfectly spiced "as is". I used a can of tomatoes w/jalapenos and this was perfect - and easy! I added black beans.

LOVE this recipe. I add zucchini and hominy for more bulk.

Very good! In addition to the above ingredients, I added 1/2 tsp Mexican spices (as I only had regular diced tomatoes, not "Mexican-style", 2 cloves of minced garlic, and 1 diced Serrano pepper. It had just the right amount of medium spiciness. It tasted so fresh!

Crowd pleaser every time I make it....I add black beans, also. I make a double batch and freeze in individual portions for quick lunches.
