This was my first time making a whole chicken. I saw the Neely's make it on the show. It looked so mouth watering and simple enough to make and the positive reviews reasured me that this was a good chicken recipe.
I was worried that the chicken wouldn't brown w/o the use of paprika, but I did not deviate from the recipe and to my surprise, the chicken turned out SO beautiful and golden brown. It was so moist and flavorful. I did not make the gravy.
One word of warning, be prepared when you take the chicken out of the oven, the butter will splatter and pop everywhere, so watch your hands. I borrowed the cast iron skillet from my parent's to make this, but I think I am going to have to go out and invest in my own cast iron skillet, so I can make this chicken again, and again and again.

This is my new favorite!! I barely make chicken anymore because my husband's chicken is better then mine. So I had to find a way to out do him and I did!!
I followed the recipe exact, except I did not do the gravy. There was so much juice in the pan by the time the chicken was done, we just took out the fat and used some of the juice. Yummy!! Very flavorful.

This was my first time roasting a chicken and it was amazing! Hands down the best chicken I've ever made or had. It was moist and delicious. I made it for my roomie and she said the same thing! Can't wait to make it for my man! The Neelys recipes never fail!!

I made this last night for dinner. I wasn't impressed with the thinness of the gravy so I thickened it a bit with flour. The chicken was very tasty and the herb butter can be used for other purposes.
Only downfall was that the oven took a big hit from the high temp of the chicken and the butter splatters.

I made this last night and my family could not get enough. We ate it all and there is only 3 of us! Not at all complicated to make. I know get to cook dinner for the rest of the week when I normally only cook 3 to 4 nights a week and my hubby does the other nights. This was a hit, the bomb, etc., etc. Thanks Gina!

I made this last night, it was very simple and easy to make. However, I was concerned about making the pan gravy because the onions got so charred. I was afraid that it would ruin the flavor so instead I drained everything using a sieve, I added some chicken broth to the drippings, then I melted some butter in a saucepan, added flour to make a paste, then I slowly whisked in the pan juices/broth. This made a traditional gravy that turned out delicious.

We made this chicken tonight and this recipe is now are favorite and will be our go to recipe. The chicken had great flavor, tender, and very moist. As for the gravy, we were not impressed at all. It tasted just like white wine. I would definitely recommend the chicken part of the recipes to friends and family
