    This recipe rocks. I recently made them for a party where 10 people attended. I took a dozen thinking...well pimento chees is an acquired taste. Well, within 20 minutes, they were all gone. I had to go home, pick up the other dozen and I make up another recipe batch. Talk about a taste explosion. I don't know if it was the green chillis, jalapenos, onion, cheeses...it was everything. I made mine with chipolte white cheddar which really worked well with all of the other ingredients. I've passed this recipe on to at least 9 people that were at the party and it has inspired me to invent other "cup cake" recipes. I admit I wanted to take credit for the recipe, but I gave it all to you and Pat. I think you need to come up with a recipe that combines this one and the pig ! I've got a few ideas. I'll post them on the webiste. Keep bringing the love!

    This recipe is so easy, fast, and delicioius! I left out the green chiles and jalapeno since I was serving it to my six year old that doesn't like hot stuff. It was a hit! This would be great at a brunch and perfect for a quick lunch with a salad. I definately recommend you make this one!

    HEY, Mr. & Mrs. Neely'!
    LOVE your show. It is awesome to see unity and teamwork, especially with married couples. Recipes are tantilizing and visually pleasing. I do have one comment - that is Gina, please let Pat taste/sample the food - it is appropriate to do so especially before it is served; and Pat, please just taste/sample (you look so heartbroken when Gina says no tasting and you respond with "but baby, we've gotta taste to see. Believe me, your tv audience doesn't mind at all if the dish is sampled/tasted!!
    Please, keep up the teamwork because the teamwork will soar you into limitness possibilities!!!

    This recipe is simply great! I followed both the pimento cheese and corn muffin recipe exactly. I did serve it as Gina did, and then I made one muffin into a "bowl" and stuffed the pimento inside and topped it with the remaining muffin top. This actually worked better, enabling you to get more pimento, and not as messy. But a great recipe overall and will become a regular in our home. I served this along side a bowl of Butternut Hominy Stew.

    I made the muffins in the the mini muffin pans and put the cheese on top for an appetizer. What a hit!

    Good flavor but I think that the "frosting" may have been better added right into the batter and baked. Not sure if I'll make these again.
