    I made this cheesecake last night and had it for dinner tonight and it was so rich and delicious! I was feeling lazy about the crust so I purchased a couple pre made graham cracker crusts. Well after I prepared the filling turns out I still had tons of filling left! I ran back to the store and bought another pre made graham cracker crust plus a pack of 6 mini pre made crusts. So altogether this recipe makes enough filling for 3 regular size pre made crusts PLUS 4 mini cheesecakes! I cooked the 2 regulars together for an hour and 1 regular and four minis together, I set the timer for 1 hour and took the minis out after 30 minutes. They came out perfect! I hope this helps anyone who is lazy like me!

    This was the most delicious and creamiest cheesecake I have ever had. I followed the directions to a T. With one exception, I poured half the mixture and put crushed gingersnaps in the middle then put the remainder of mixture over it. Wonderful!!! I was a big hit!

    i love this recipe! my mom is vegan so i sub to the vegan cream cheese and egg substitute you cant even taste the difference best cheesecake ever!!!!! thanks GINA

    OMG!! I wanted to dive into this and stay there, and if I drowned in it...what a way to go!!! Unbelievably rich and delicious. Didn't change a thing except as other reviewer, used my Kitchenaid mixer. Thanks Gina for making me look good in front of company, or at least I will tomorrow when I serve it to my out-of-town guests

    I did a test run last week since I've never made a Cheesecake before and it was the best I've ever had!! I followed the exact recipe as followed but I opted for a graham cracker crust rather than the ginger snap. (1 3/4 Cups crushed crackers, 3 tbs light brown sugar, 1 tbs cinnamon, and 3/4 stick melted butter I did not pre bake it either.

    Even though I wrapped the pan well with foil, the crust still got a little wet. After putting it in the fridge and slicing into it, you couldn't even tell, it still tasted amazing and looked fantastic. No cracks either!!! The boyfriend loved it so much, he was raving about it and he couldn't stop making yummy noises the whole time.

    Since I don't have family in the area, I've always gone to a friend's house for the holidays and because of this cheesecake and other recipes from Food Network, I've been asked to make Thanksgiving dinner!!! I can't wait to make this again!

    I have made plenty of recipes from the food channel over the past 2 years and none has received as much praise as this recipe. This cheesecake has taken on a life of it's own. I have made it several times and it seems no one can leave a party without requesting the recipe. People are just blown away by just how delicious that this cheesecake is. My wife took a few slices to work one time and when she came home that night, she was asked by a co worker that I don't even know to make it for his birthday (I obliged

    I follow the recipe to a T but do use a Kitchen Aid Blender to do the mixing and to speed up the process.

    Oops moment...I am making the cheesecake for a party tonight and I left it on the kitchen counter and walked away for a minute. My beloved golden retriever couldn't even resist the cheescecake as I walked back in and caught him licking it (luckily a small portion. Even he thinks it's delish!

    To sum up...an 11 on a scale of 10!

    O my word! This was the best pumpkin cheesecake I have ever tasted! I made this and it came out perfect! No cracks at all! Ever one loved it! I will be making this again and again! Better than store bought! If you follow the recipe you will have the perfect cheesecake that everyone will rave about! Thank you Gina
