The cheesecake is cooling right now and it looks amazing! I followed the recipe almost exactly. I used a 9 inch spring form pan. The recipe does make a LOT of filling - I had a bit of filling leftover which I ate with a spoon : I followed the directions for the water bath and I baked for an extra 10 minutes. After 90 minutes, I took it out of the water bath and put it back in the oven for an hour with the oven turned off. I'm letting it cool completely before I put it in the fridge. There is only one tiny crack in it. Also, when I took it out of the water bath, it was pretty jiggly. However, after the hour in the turned-off oven, it isn't jiggly anymore!

An easy dessert that will make a great impression. Use more Ginger Snaps. The whipped cream is awesome!! Make enough!!!

I made this last year for Thanksgiving and I will be making it again tomorrow because of all of the requests. It was to DIE for!! SO good, and very easy!! Each ingredient adds something special to the finished result so don't leave anything out! :

This is delicious and relatively easy to prepare. It is very light - not a heavy cheesecake. The cinnamon whipped cream makes it!

I recently just baked a trial of this recipe, and i LOVED it! i had absolutely no cracking and the water bath really kept my cheesecake very moist.I think the key to preventing cracking or water leakage from the water bath, was to really make sure you used HEAVY DUTY foil to wrap your spring pan, and make sure not to overbake. I'm very excited to bring this to thankgiving dinner!!

This was AMAZING! I added extra spice and made a bourbon caramel to go along with the cinnamon cream and I got rave reviews from my family. I will definately be making this again and again.

This cheesecake is FANTASTIC! Made it last Thanksgiving and everyone loved it. It was the perfect blend of creamy cheesecake and pumpkin pie. Thanksgiving is my family's favorite meal of the year and this will be on the menu for years to come!

It is worth not using just any old store brand ginger snaps - I like Anna's or homemade (the extra effort elevated an already fabulous recipe.
