I have loved all the Neely recipes I've made, but this one needs to be re-worked. The shrimp won't stick to the stick (yes, it spins around, even after extra chilling, the batter is too thick, and it wouldn't stick to the shrimp, with or without dredging in the flour. After you finally get it in the oil, it is way too thick. I tried it without the sticks and had shrimp corn dog hushpuppies. Batter was still too thick. The dipping sauce needs 4 TB chili sauce to taste like a cocktail sauce/mayo. Too mayonaisee otherwise.

I am watching the show and its true he said ONE cup of flour and not two like it calls for in this recipe. It might make a difference when I go to try it :
    p.s. I LOVE the show!

    1. dipping sauce is great....i used creole mustard, but, then, whenever mustard is called for, that's what i use.
    2. being an avid baker and cook, i didn't like the ratio of flour to cornflour. i thought as one reviewer said, it would be very crumbly. i searched and found a recipe for the batter called "A plus fair corn dog batter". i did it exactly as the recipe said. it was perfect, although i might thin is a little more.
    3. the filling was great and easy to mold. i like a little heat, so i used emeril's essence that i make myself rather than just salt and pepper. i also added chopped parsley. it was delicious.
    4. i used the round sticks used on the show, but the dog tended to spin around it so next time i will use flat popsickle sticks.
after i made those adjustments it was a huge hit!

The batter clearly calls for 1C flour with the other ingredients. You dredge the shrimp mixture in the other 1C.

My son and I enjoyed making the corndogs. I must say I believe the sauce is what made this a hit. I will eleminate the process of making the corndog and just fry up some shrimp and defintely make the dipping sauce for the shrimp. Keep up the good job guys!!
