I have tried many corn chowder recipes and this is one of the best. I sauted the corn with the onion because caramelizing it brings out the fresh corn flavor. To skinny it up, I omitted the flour and cut the cream to 1/2 cup. This makes a thinner broth but it is still delicious. Thank you Gina!

Having a good supply of locally grown corn at this time of year inspired me to search for a good corn chowder recipe, and this one is top notch!! I did substitute some chopped homegrown celery from our garden for the red bell pepper and added 4 TBLSP of unsalted butter, but I stuck with the recipe otherwise, including the jalapeno pepper and cayenne which gave the chowder a nice little burst of heat without being overpowering. This chowder with the chicken broth and cream is definitely a winner in our house. I will be making more and freezing it for the winter months. Thanks, Gina. You know how to make a great chowder!!

I (and the family love all of the spicy, rich flavor of this dish. If you like h-o-t (in a good way then, this is perfect for you. I used 2% milk for a healthier twist, and the chowder still thickened up really well! It is a heavier dish, so the lighter milk helped taper some of the heaviness. Best of all, it was easy to prepare! Even a novice such as myself can do it. Thanks so much!

I had a craving for corn chowder. So i search the Neely's cookbook and saw the recipe for Spicy Corn Chowder. Well, it just had too many ingredients. I ran across this one while i was searching for a substitute on line and i found this one. I needed a little more spice so i added the smoked paprika from the recipe that is in the book. I took some of the broth from the chowder and 2 tsp of flour to make a slurry in a separate bowl to make it a little thicker. Overall, good recipe but i will be trying some of the others that i saw. Thanks Gina and Pat.

I don't normally like garlic, and being pregnant all yuck smells just turn me off but I tasted it and WOW! I did end up adding about a half cup more of flour and let it simmer about an hour but this is definitely a permanent addition to our cookbox!!!! Thank you Gina!!!! Did I mention yum!!!

I always watch cooking shows but never really feel compelled one way or another to make a recipe LIKE RIGHT AFTER I SEE IT! This time however, I did. lol. I doubled the batch for leftovers. It was/is (still eating it sooo good. I like spicy things so I left in the ribs of the jalepenos (so glad I did. I dont think it would have been as spicy w/out. It needed some more salt which I just added to my bowl instead of the whole pot. As I tend to like lots of salt. Its a definite winner and have a few people on my FB friends list making it as well!

I made this in my home. I did make some slight variations to the recipe. I doubled the recipe and use half seafood and half chicken stock. I also used yellow, red, orange, and green bell peppers. I also added small amount of fresh nutmeg, small amount of sugar, small amount of cumin, and tumeric powder for color and to round out flavors. Lastly, I added some cornstarch to thicken up a bit. Towards the end of the cooking time I added crab meat (claws and shrimp. Delicious and family is looking for another servings. A must have for your winter collection.

I made Gina's soup this afternoon...rainy afternoon in CNY and have been aching for soup.
We added/changed a couple of things. We added cremini rooms & more broth. When we added the froz. corn, we also added a little froz. okra for green. We threw in smoked andouille, diced, also. I skipped the heavy cream (a calorie here, a calorie there. We used Dinosaur BBQ foreplay season ( from Syracuse NY instead of cayenne. My other half (and a guy who loves to cook too loved it. It's a keeper. I'm thinking fresh baby spinach could also work. I can skip the meats, but not my hubby! We served garlic bread to dip..yum!
Thanks Gina and Pat!

I have made this recipe numerous times and everybody, including myself, loves it! I made it with fresh corn from the cob this last time and it was even more fabulous! I think it's spicy enough to give it that "kick" yet not overpowering. It's great! Thank You!
