Glazed Sweet Potatoes

Ingredients
  • 4 tablespoons butter, plus 1 tablespoon for greasing
  • 4 medium yams or sweet potatoes, peeled
  • 1/2 cup brown sugar
  • 3 tablespoons maple syrup
  • Freshly grated nutmeg, to taste
Directions

Preheat oven to 375 degrees F. Grease a 9 by 13-inch baking dish with 1 tablespoon butter.

Cut each of the yams into 8 evenly shaped wedges. Lay them out in the prepared baking dish in an even layer. Melt the butter in a small saucepan over medium heat. Stir in the brown sugar and allow to dissolve. Mix in syrup and cook until smooth. Pour the glaze over the yams and sprinkle with nutmeg.

Cover the baking dish with foil and bake for about 45 minutes or until the yams are tender when pierced with a fork but they still hold their shape.

Definitely an easy and delicious sweet potato side dish. I sliced them crosswise rather than lengthwise since I was concerned they would fall apart as I tend to over-bake them. I also sprinkled the dish with salt and pepper which gave it a more savory rather than sweet flavor which we prefer in a side dish. I made this recipe as directed except, during the last 15 minutes of baking, I added about 2/3 cup chopped toasted sugared pecans and some Honey Special K cereal to make a crunchy sweet topping. This recipe is simple and delicious. I decided to try a new recipe for my Thanksgiving dinner. I checked out the ratings of this recipe and I was not disappointed. My mother-in-law, of 30 years, is a great cook from Mississippi who has never had seconds of my sweet potaotes until this year. She raved about the taste of nutmeg that is used in this recipe. I am a former Home Economist and I take pride in being an excellent cook.. I sliced my potatoes crosswised instead of horizontal and I tripled the recipe. I hosted about 20 guests but I put a little away for myself. The next time I bake this dish, I will prepare it the the night before. It tasted even better the next day after the flavors of the nutmeg and the maple syrurp soaked into the potatoes. I found I had to cook the sweet potatoes longer than the recipe called for. Also, there was a lot of runny syrup in the bottom of the cooking pan when it was finished. These sweet potatoes are great....and as mentioned inother reviews, they only improve with age. I have served them several time since I saw this recipe right before Thanksgiving. I have always hated making sweet potatoes for holiday meals, even though they are a must have dish. The fact that you don't have to boil or bake these sweet potatoes prior to the glazing, make this recipe a real winner in my book. I absolutely love this recipe. It's so EASY and to make and simply DELICIOUS! Quick prep time is my style! I used YAMS and a 100% vegan margarine, and it was a big hit! These were WONDERFUL!! I like sweet potatoes to begin with... but for the past few years i've found that the recipes I had been trying have been WAY too sweet.. with waaaay to much butter, sugar, marshmallows, etc. The glaze brought out the flavor of the sweet potatoes, but wasn't overpowering. They tasted SO much lighter than the ones I've had in years past (and I feel that are more friendly on the waistline!!)
