    This is a perfect summer salad and I look forward to making it all through the winter! It has a perfect combination of sweet and savory...I've served it at several cook outs and family functions and each time I always get the same reaction "This is the most incredible salad i've ever had!" I also used half arugula and half spinach for a change in texture :

    I loved this recipe! It was a nice end of summer salad and wonderful savory flavor!!! My family cleaned the salad bowl completely, which is not the usual response. I did decrease the amount of bacon grease by draining off around a tablespoon or so, but that was personal preference as to how I like my salad dressings. Also I did half arugula and half spinach. Loved it!

    I am not a big fan of raw spinach salads, but this recipe is very, very good. The bacon adds just the right amount of salty, smoky flavor with the sweetness of the peaches and the tang of the balsamic. These flavors blend really well together.
    This is a keeper. Thanks Gina and Pat for this one.....

    I loved this salad. I added bacon drippings to sauce. The peaches and the vinagrette have such a wonderful flavor.

    This would have been good except for that. The whole family agreed. Next time I will toss the bacon drippings and make the salad dressing using a good quality olive oil.

    Thank you Pat & Gina. I made this salad with Arugala, and it is fantastic. The salad as well as the dressing is great. This is a perfect summer salad!!! You guys keep the great recipes rolling!!!!!
