I didn't know if a 'grilled' shrimp po'boy was going to fly with my my New Orleanian hubby. Being from Cali myself it sounded great! I followed all of the exact measurments and ingredients (with the exception of the lettuce; I used Romaine chopped fine. It was VERY easy to make. I've never had a 'grilled' shrimp po'boy...always fried however this is by far THE BEST SHRIMP PO'BOY I have ever had post & pre-Katrina! There were rave reviews from the family last night and I took it as a postive note when my husband rolled his eyes in the back of his head and said Mmm, Mmm Mmm :

I followed the recipe fairly to the tee except I really didn't have time or make the butter sauce--or maybe I just forgot. Nonetheless, it actually turned out great. Since this was last minute, I didn't skewer or grill the shrimp, I just sort of sauteed them on my indoor griller. Next time I'll use larger shrimp, but it was very successful.

I made this today for Sunday football and it was amazing. It takes some time but is so worth it. I did make a few adjustments since my husband does not like hot stuff. I lessened the hot sauce to a tablespoon and replaced the cayenne with a tablesoon of OLD BAY Seasoning and it was so perfect!! I used a country farm bread I got from our store bakery. I also used green leaf lettuce. After the shrimp was on the bread I poured over the left over butter sauce and is was amazing!! On the Mayo the only thing defferent was I added Old Bay again and two cloves of crushed garlic. This makes alot so make sure you have a crowd. Enjoy and keep up the wonderful cooking Pat and Gina!!!
