To DIE for!!!! Vidalia are my favorite onions and a reason to look forward to spring. This recipe is amazing. I use St. Agur Blue Cheese because it is really creamy, melts well, and has a great flavor. I love serving these onions as a side to apple brined pork chops and butter/parsley white rice. NOTE: I usually keep Oscar Meyer pre-cooked real bacon pieces on hand for recipes like this, bacon cheese fries, and as a great addition to omelets and salads.

Was awesome!! We used a sharp white cheddar, rather than Blue Cheese as we are not big fans of Blue Cheese and it still tasted delicious!!

I actually made just the bacon butter and served it with ciabatta bread. The bacon butter was excellent. The thyme added another level of flavor and enhanced the blue cheese and bacon.

This dish was AMAZING we used feta cheese, but this was the absolutely delicious. Even my picky daughter (who doesn't like onions loved this recipe.

At first I wasn't sure how my tastebuds would react to eating a whole onion, but we made it...that was the most boldest tasting food that I have ever had. Not a big fan of bleu cheese but this wouldn't be the "best onion ever" if you didn't add the bleu cheese

I usually have to modify recipes that I try for the first time...but this one was delicious as is. I was able to taste every flavor. I didn't even bother to fix my husband an onion because he doesn't like blue cheese but after he had a taste of mine he loved it and then asked if there were anymore. Keep up the good work Neelys
