I had not had any homemade rice pudding since I was a child 40 years ago.
My family has true southern cooking roots and this pudding was out of this world. Thank you for a wonderful show and recipes.

I wanted to try Gina's recipe, due to the fact I am trying to use up all my carbs. I was getting tired of risotto, jambalayas and paellas with this arborio rice I have, so I was ready for it!
1. No vanilla been so I used vanilla extract, about 1 tsp in 1/4 tsp increments to taste.
2. added 2 handfuls of golden raisins
3. 1 small piece of lemon zest
3. 1/4 tsp allspice
4. 1/4 tsp of cinnamon.
5. a few grinds of fresh nutmeg.
5. Med-high heat was too high on my stove I had to keep it closer to med-low to low. I kept a close eye on it to avoid over boiling. Closer to 35-40 mins rather than 45.
Seemed a little too sweet to me, next time, I will go with a 1/4 cup sugar first and add in Tbs increments until to my taste.
The sweetened bananas would be overkill for me. I think a shaving of dark chocolate or some sliced fresh strawberries would be a great idea!
Good Job Gina, simple and satisfying. I will try this again!

I modified the salt amount and added more vanilla(because I love vanilla, but it turned out thick and yummy, turned out exactly the same as on television. I cooked it on low the entire time.

I was visiting my son in VA, and didn't have a cinnamon stick to make my family's recipe ..but he did have allspice in his pantry so I tried the Neeley's recipe. I was disappointed. I don't know what I did wrong, but it came out starchy and the allspice was overpowering and sort of bitter.

I have never had rice pudding in my life, just the thought of it turned me off. The Neelys turn me on, no pun intended. My wife says it it better than the rice pudding her mother and grandmother made when she was a kid. I have tried several recipes from the Neelys and have not been disipointed. Great addition to the Food network team.

Once this pudding finally thickened it was great...I started the mixture on medium high heat and then lowered the heat so the mixture simmered the Arborio rice 45 minutes without a lid, stirring occassionally, and nothing happened. I think I had stubborn rice. Then, I became impatient and covered it with a lid for another 20 minutes, and Voila, the pudding thickened. The Caramelized Banana topping blended perfectly with the rice pudding's flavor..

I tried this today after a great meal. The topping was excellent over vanilla ice cream and a little whipped cream. Thanks for the recipe.
