    Mine did not have the firmness of mashed potatoes however they were still very flavorful.

    This recipe is a keeper. I will add more roasted garlic next time ( I misread the recipe and only added 2 large roasted garlics. I also added some Parmesan peccarino as well as the cheddar. I made it a couple of hours before dinner, put it in a casserole, adding more cheese and some panko crumbs on top. Then 30 min, before dinner, put it in the oven to finish cooking. I think that next time I might add an onion ring topping for crunch.

    Love this recipe!! Great side dish. I love mashed potatoes, but I don't always want to eat all those extra carbs.

    My 19-year-old son just started a no-carb diet and I made this for him instead of mashed potatoes. Everyone in the family loved it (including those of us still eating carbs!.

    I highly recommend that you drain away the broth before blending / processing the cooked veg. The finished product was still thin but it thickened a bit upon standing. I used cream instead of milk and, instead of blending in the cheese, I sprinkled it on top.

    Great served with grilled meat.

    I generally don't like cauliflower but other reviews convinced me to try this recipe. It was delicious and quite simple to make! The roasted garlic was the star of the show and masked the cauliflower taste. I drained the stock before blending and could have used less than 1/4 cup milk but it was still fairly thick. I'm considering doing it next time without the cheese just to see what it tastes like (I can always add cheese after the fact!. My husband also liked it which confirms that cauliflower is officially a vegetable choice in our house......thanks!

    Wow! We all hate cauliflower and we ate every bite of this!! It's SOOO good!! I did add a bit more cheese, but did the recipe like it says other than that. Most of my chicken broth had cooked out, so I didn't have to drain it. YUM!!!
