    To holiness-How can you even begin to rate something you not only haven't tried, but are inquiring about substitutions for? It's people like you that are a little slow in understanding that a rating is to let others know how you judge the finished product. FYI, alcohol cooks out in a deep fryer.

    To mjpiper. "batter browned but fish not cooked." I think what happened was the temp of oil was too high at 375. I generally start at 360-365, never add too many pieces of fish at once (this brings the oil temp down very fast and always make sure the fish pieces are all the same size. The temp should always start out high (for me that's 360, and keep adjusting it so it's always at a the same temp. Another thing to keep in mind, there is sugar and honey in the batter which tends to brown quicker. You may also trying cutting the fish into fingers and fry. Give this wonderful recipe another try, it's worth it. Good luck.

    I love the Neelys but 2 tbs sugar and 2 tbs honey was overkill! Would you like some fish with your sugar?

    We had this last night and it was wonderful. The batter stayed on the fish with no problem. I used 12 oz of beer plus a little water. Not having a professional fryer, I put about 1-1/2 quarts of canola oil in a large, heavy pot. Can't use peanut oil because we have family members who are allergic to nuts. Used a candy thermometer to monitor the temperature of the oil at 375. Don't crowd the pot or the fish pieces will stick together. After 7 minutes the fish was cooked perfectly. Such a delicious meal with the Neely's Easy Rice Bake Casserole. This recipe is a keeper.

    this recipe is the best. I've tried all kinds of battered fish recipes but this one is it. The only thing I changed was I used 12 oz of beer because I drank the other 4 oz :
    I had no problem with the batter falling off and also the fish didn't stick to the basket either
    make sure before putting the fish in the batter that you dry this fish off with paper towels real good

    I had no problem with the batter coming off the fish. I kept adjusting the oil temperature in my frying pan to avoid burning the coating. The fish were golden brown and that batter was delicious. My son who is a picky eater loved this recipe. I will definitely cook this again.

    After reading the comments that the batter fell off and fish stuck, I made these little changes to the procedure: I cut the cod into large "fingers," dried it first, then dredged in flour before battering. Made sure my oil was really hot. Had no trouble with sticking and the batter stayed on tight as a drum. For the sauce I used what I had...jarred, sliced jalepenos and dried parsley. Got raves. Way to go Neelys!
