My husband is diabetic, I need new ways to make sweet potato's..This even though there is sugar in them, is a great way to have a sweet treat. I used a little less brown sugar. They carmilized just beautifully, soft, tasty. Will be on my table often! Thanks Neely's I love your recipies !!

My family loved these. I especially like the way they carmelized in the oven and required relatively little sugar or fat for similar results to my grandmother's incredibly decadent stove-top version.

The photo of these fries made me drool. I have the book cook yourself thin and there recipe for sweet potato frIes have garlic and chili powder, which I don't like. I made the Neelys for dinner last night and they were very good. Next time I will reduce the salt, and the oven temp. I should have trusted that I know my oven rather than the temp from the recipe. I almost burned them up. I love that they have no hot spice in the recipe. They were soggy during cooking but they firm up after they are removed from the oven, Just how I like them. Let them rest for 5 min.I will make these again for sure even though I hate cutting sweet potatos, they are a very hard potato to cut up especially for fries. Any way, THANK YOU, NEELYS I CAN STILL HAVE FRIES.

Hey, Neelys - Thanks Y'all - I just made this recipe for dinner. Awsome! I don't usually care for sweet potatoes, but the Southerner in me always makes some form for Thanksgiving, so I wanted to try something that isn't smothered in marshmallows before turkey day.
This recipe is yummy and easy... my kids even enjoyed it. I added about a 1/4 tsp. of cayenne pepper to the mix. It starts out sweet and finishes with a kick!!!!!
    YUMMMMM!!!!!!! Thanks, Julie

In reading previous reviews, I saw that the majority of people complained of the fries being soggy. So in an attempt to prevent soggy fries, I DRASTICALLY cut the oil. Instead of 4 Tablespoons, I put 1 Tablespoon, and baked for 45 minutes instead of 30. *It's important to flip the fries every 10 mins, or the brown sugar will burn them* The end result was FABULOUS - nice and crispy on the outside, and soft on the inside. Delish!! Even my picky husband digs 'em. I will surely make these again!

I like them sweeter so added a little more brown sugar but these are awesome. So are the Memphis Spicy Fries. My family love them.

After reading other reviews, I only used 2 tblsp olive oil, used 1/2 tsp smoked paprika and 1/2 tsp chili powder, cut potatoes into 1/4" strips and baked at 475 degrees for full 30 min, turning every 10 min. and got crispy, delicious fries. When I make these the next time, I will add the salt and brown sugar to other mixture to toss. My husband wants to share recipe with others! We will be having these regularly!! Thanks Neely's for a healthy alternative to deep-fried potatoes!

Taste was great. A little soggy, so I stuck them under the broiler for a few minutes. Some were still a little soggy but the flavor was great.

I took a bit of advice from a few of the people who reviewed this recipe and came out with an amazing snack...alright so it makes a lot, but I was in the mood for some sweet potato fries. I did cook them for less time (about 15 min, turned them after 10 minutes then checked to see how ready they were, it also depends on how thick you slice them. I poked them with a fork and they were ready. Then I sprinkled some chili powder....tasty!
Try it, it is a great mixture of spices and the flavor is wonderful; it may take a few tries to get them how you like them, but I would recommend this to anyone interested in trying some delicious Memphis Fries.

The fact that the instructions indicated to bake for 30 min., is what caused the sweet potatoes to become soggy. My suggestion is to bake until the sweet potatoes are tender inside but still firm on the outside. Remove out the oven and fry on the stove stop for a few minutes or until their golden and crisp on the outside. This way, it will prevent the "SOGGINESS" of the fries.
