    Let me say this... My boyfriend HATES veggies... but LOVED this dish. In his words, "This is going on the list!" His mother will be so proud! I made this dish without the beans because I didnt have any. And instead of using a whole red bell pepper i used 1/2 green 1/2 red... I love red bell peppers raw. I served it aside a dry rubbed steak (Ann Burrell's recipe. CROWD PLEASER FOR SHO!!!! MAKE MAKE MAKE MAKE MAKE THIS!!!!

    its shocking how delish this salad is. And its healthy! my family cannot get enough of it and I want to make it constantly! Thank you to whomever thought of it!

    Loved it! Used as a main dish and a side. Added a little more cilantro, garlic and black beans instead of pinto (too mushy. The blend of flavors is wonderful!

    I tweaked this a little and my family loved it, the first day we ate as a side and the next we put it in wraps with some grilled chicken. I used black beans because pintos are mushy, I made just a little more rice than it calls for,lots of lime juice,and I added some garlic salt and garlic powder for more flavor,was really good!

    Made this dish tonight for dinner after watching the show this morning. This was excellent! I followed the recipe exactly, but just left out the jalepeno. I suggest using queso fresco. I probably used more cilantro than it called for because we just love it. This dish accompanied my fish tacos (grilled tilapia with cilantro & avocado cream sauce just wonderfully! Thanks Neelys!
