Ingredients

  • Kosher salt
  • 1 bay leaf
  • 1 pound medium shrimp, peeled and deveined
  • 1 rib celery, minced
  • 1 small shallot, minced
  • 1 tablespoon chopped fresh tarragon
  • 1/3 cup mayonnaise
  • 1/2 teaspoon Dijon mustard
  • 1/2 lemon, juiced
  • Freshly ground pepper
  • 12 slider rolls, split
  • 3 tablespoons butter
  • 1 clove garlic, minced

Directions

Heat the broiler. Bring a large pot of water to a simmer. Add a large pinch of salt, bay leaf and the shrimp and simmer for 2 minutes. Drain and rinse under cold water to stop the cooking. Dry very well with paper towels and then chop the shrimp.

Combine the celery, shallot, tarragon, mayonnaise, Dijon mustard, lemon juice, salt and pepper in a medium bowl, and then stir in the shrimp.

Combine the butter and garlic together in a medium-size microwave-safe bowl and melt in the microwave until melted, about 20 seconds. Brush the top and bottoms of the rolls with the garlic butter. Place under the broiler and cook until toasted and golden brown, about 2 minutes.

Add about 2 tablespoons of the shrimp mixture to the bottom bun and top with the remaining bun halve. Secure with a bamboo skewer. Serve immediately.

    I didn't change a thing to the recipe except to cook the shrimp I brought the water with lemon,garlic salt,celery and a little " shrimp boil" to a boil,turned it off and added the shrimp,let them absorb the flavor for 2 min.and then took them out into ice water. These were the most flavorable and tender shrimp I have ever had! then continued with the recipe. I will be making this recipe many times in the years ahead. Thank you !! j.w.

    Let me start off by saying i am a Neelys Fan and i watch all their shows, and i did enjoy this recipe but like the other comments- i would add more celery and some garlic powder- but otherwise it was good-

    Let me start by saying I do not like shrimp. I made this recipe for company and they absolutely loved it, paired with the corn fritters and clam chowder, which I also do not normally like.

    I have been converted! The shrimp "salad" was delicious. I would add more chopped celery. I grated the onion and some garlic in. Served on large very soft rolls.
