What an easy and delicious meal! Added mini white potatoes along with the carrots during the last hour; otherwise followed the recipe exactly and family absolutely loved it! The meat was so flavorful and tender. No leftovers in this household! Thank you Momma Neely!! This one is definitely a keeper!

OMG this was the absolute BEST Pot Roast I have ever made. Sorry that I didn't get a bigger piece of meat for more leftovers. (went today and bought another bottom round which is on sale, so I can make this again real soon. Used dry thyme, added mushrooms and potatoes for a totally complete meal. The Neely's did it again.

Tried this last night and it was deliciois! I added potatoes with the carrots and mushrooms with the onions. Didnt have any wine so used balsamic vinegar and red wine vinegar instead. Will try again with wine next time.

Fantastic! First time my bottom round roast has ever turned out so tender and flavorful. We leave for church at 8:30 and get home at noon, so my modification was to put the carrots in as soon as I put it in the overn and had the oven at 325 instead of 350. It was perfect!! Not quite enough carrots for my family of 5 but with other side dishes, we did fine. The gravy was scrumptious although for personal preference I thickened it with a little cornstarch. I didn't use wine but used all beef stock instead. This will be made over and over again at my house.

WOW...the house smell so YUMMY while this is cooking! Great tasting recipe and very easy. Much better than doing the roast in the crock pot, meat isn't stringy & dry. Even though it's not supposed to get dry in the crock pot mine always has. After cooking there really isn't much juice for gravy, so I added another cup of the beef stock and pureed' some of the veggies to make a nice thick gravy...yum. Try this recipe you'll be happy you did.
