Everything can't be a 5 out of 5, so I did 4 stars, but this is a high 4 stars. I love the Neeley's and their recipes. I particularly like this recipe. I also made a few changes as I always do with all recipes, tailor it to my liking, but not to say this recipe is great on it's own. I added more celery and carrot than suggested. I love a lot of veggies in my soup so I up'd it to 6 carrots and 6 celery ribs. I also put a little extra garlic in with the cream and butter to infuse more flavor into the dumplings. I would also like to comment on the dumplings being "not so good" or "dense", I disagree and perhaps it's the way you are preparing them. I find it is easy to want to make the dumplings large because it is faster, but resist the urge and stick to quarter (or slightly smaller size dumplings. More of the broth will get obsorbed. Never take the lazy route or else you will end up with food that's "not so good'. I also added celery salt and some more dried italian herbs to the recipe.

Easy and the dumplings were magnificant... I used a bit of extra salt and pepper when making the dumplings and they were delicious!! My two growing teenage boys are devouring it.

    Thanks Neelys

If my 9 year old son loved it then you know it's good!! He doesn't like much but this tasted amazing! I used 2.5 lbs of chicken breasts simmered on high for 4 hours in 6 cups of broth in a crock pot instead of a whole chicken. Threw in a little celery salt, too. Dumplings were a little dense but still very good. I think next time I'll add a little baking powder and see if it lightens them up a bit. Definitly making this again!!

The Best!! The method was easy, followed recipe, but didn't have fresh thyme so subed dried. Also, after reading reviews, didn't want to take a chance on dumplings so used tried & true Bisquick! Will try the dumplings next time, because this is my favorite, by far!

Taste wise I would give this 5 stars. I used Emeril's Essence to season the chicken after shredding it and I'm glad that I did. It added a subtle kick.

I followed the recipe to the letter but the evening was busy and I ended up making the dumplings and letting them set for 30 minutes or so before adding them to the soup. Also, not having grown up eating dumplings I'm not sure how they "should" taste. My grandmother, who grew up in North Carolina tasted them for me and said they had a good taste and that the texture was correct though she felt I could have added a pinch more salt (smile. It reminded me a lot of chicken pot pie for some reason.

They were not DENSE but seemed heavier than expected and as some reviewers described melted in your mouth and had a very tender texture. When I cut into some, the center seemed dark despite letting the soup simmer so much longer than required (50 extra minutes.

I didn't watch this episode and maybe that would have helped. The broth was tasty but I had to thicken it. I replaced the cream with 1% milk, per some suggestions. By the time they were cooked through, they were brick-like, shall we say? It isn't fair to be negative when I didn't follow the recipe exactly, tho, and I would probably try it again, using the cream!

This dish turned out very well. The cream in the dumplings melted into the broth to make it a very rich stew. And, especially happy to see the dumplings remain plump and tender and not melt away to 'where'd the dumplings go land.' Will use this easy dumpling recipe for all my dumpling needs.
