I was looking for a simple but different chicken salad, and I found it here. We had 3 families over for dinner and everybody raved about this chicken salad. I didn't do the tomatoes--it was perfect for sandwiches or on top of lettuce. I'll be making this again for sure.

I just needed to add a touch of heat with cayenne pepper.

made this today for the first time for a summer luncheon with the girls and it was amazing! even my hubby raved...we actually ate the leftovers for dinner on some nice rustic bread slices! sooo easy...the tarragon and grapes are the key...a perfect balance! definitely a keeper!

I used no shallot or grapes. It is really good on a soft multi-grain bread. A keeper I will make often. Oh and I had to use dried tarragon because I could not find fresh and it was outstanding.

This was quick, easy, and delicious! The crunch from the almonds and the celery made the dish, and the grapes add just the right touch of sweetness.

I made this tonight..... opted to use a full small red onion and omit the shallot. I decided to bake a whole chicken instead of using rotisserie.....still very tender and juicy. Ate it on bread instead of in the tomato cups, but it was so good! I loved the crunch and texture of the almonds and the celery. The grapes give it a hint of sweet. My favorite chicken salad recipe to date!

I made this recipe for my family and they absolutely loved it. I asked my 13 year old to taste it to see what he thought. He kept diverting my attention across the room so he could grab another spoonful! Wonderfully delicious and fresh.
