This recipe is fantastic but a quick note. Please mark your water line after removing your turkey. If you mark your fill line with the turkey in the pot you will overfill with oil and possibly cause a boil over when you put your turkey in. In other words put your turkey in the pot, fill until water covers your turkey, remove your turkey, then where the water level sits is where you fill to with oil. The instructions above say to mark your level while the turkey is in the pot.

Since trying your recipe (rub , I am now the official "turkey fryer" of the family. I have cooked two so far and they seem to keep tasting better. They were so juicy and golden brown, Thanks Gina & Pat.

I've fried turkeys before. But using the Neely's rub recipe after soaking the turkey 24 hours in Alton Brown's brine recipe put this over the top. The turkey was juicy and flavorful throughout. Much better than using an injector, which only flavors specific areas.

The turkey was outstanding! The seasoning was delicious, the turkey was very juicy. Made it for Thanksgiving and it was a huge hit. Thanks Pat and Gina!

Great Recipe, It was my first time doing a deep fried turkey. The smell alone had people coming outside and asking what was I doing? Thinking about doing it again for christmas....My deep fryer had a line already set up so I was good to go with the oil. It was Good and Juicy........the crust was !!!!!....I'm doing it again.

CAUTION!!! Maybe a correction has been made by the time I post this. Do not fill the frying container with oil to the mark made on the side while the turkey was in the water. This amount of oil will more than likely overflow the side and cause a fire when the turkey is added. The proper oil level should be the water line AFTER the turkey has been removed from the water.
