Very good alternative to the classic eggs benedict. Two observations to consider is use three SMALL potatoes. I ended up with 12 croquettes using 3 regular sized baking potatoes. Not a big problem because they freeze well but I should have added another egg because they didn't stay together as well as they should have. Also instead of a 1/4 cup amount of potato mixed I used a 1/2 cup. It made the same sized croquettes that are on the video.

I cannot wait to make it for my family, I tried it and loved it. This recipe is great because we have guests that stay for the weekend and I need easy, great breakfast ideas. Thank's Pat and Gina.

OMG! I made this dish for last Sunday's Breakfast for hubby and I and hmmm hmmm hmmm Delish! Hollandaise Sauce was great and easy, as well as the orange glaze sauce for the peach fritters.I couldn't believe how easy and tasty this was I have been bragging to everyone I know. I love you guys to pieces keep the great recepies coming and the love you show...

Absolutely wonderful recipe! The first time I did this, I cheated and used a cheese sauce instead, but it was still good! I will do their hollandaise sauce next time! I plan on using this recipe quite often!

Just made this for my family for Christmas morning brunch...so yummy! I have had difficulty making hollandaise in the past and for sure using the blender is key, it turned out perfectly. Will for sure make this recipe again and wouldnt change a thing!! Thanks Nelly's!!!

I usually don't care for the Nealy's recipes, but I found this one interesting. I used the Hollandaise and the fried egg theme, toasted English muffins and used smoked salmon (the way I usually eat eggs benedict, and it was good. a simple way to make a great breakfast.

this is a great recipe my wife loved when i cooked it for her on her birthday s and mothers day
