Neely's Fried Zucchini

  • Peanut oil, for frying
  • 3 large zucchini, cut into 1/2-inch rounds
  • 1/2 cup all-purpose flour
  • 1 1/2 cups panko bread crumbs
  • 1/4 cup finely grated Parmesan
  • 2 tablespoons finely chopped fresh parsley leaves
  • 1/2 teaspoon red pepper flakes
  • Salt and freshly ground black pepper
  • 3 eggs, lightly beaten
  • 1/4 cup water
  • Ranch dressing, for dipping
  • 1 cup sour cream
  • 2 tablespoons buttermilk
  • 1 medium shallot, finely chopped
  • 1 tablespoon chopped chives
  • 1/4 teaspoon cayenne pepper
  • Dash hot sauce
  • Kosher salt and freshly ground black pepper
Spicy Dipping Sauce:

Preheat oil in a deep-fryer to 350 degrees F.

Measure flour into a pie plate. In another pie plate combine panko, Parmesan, parsley, red pepper flakes and salt and pepper, to taste. In a third plate add eggs and water. Dredge the zucchini in the flour, followed by the egg and finally in the panko.

Working in batches, place the breaded zucchini slices in the hot oil and fry until golden brown, 3 to 4 minutes. Drain on a paper towel lined sheet tray and immediately season with salt and pepper. Serve alongside the zucchini.

For the sauce:

Add all the ingredients into a serving bowl and mix until incorporated. Cover with plastic wrap and let flavors marinate for at least 1 hour.

    Tthese are just the best! Easy to prepare, great flavor, and no special fryer needed. Fried just beautifully in a regular frying pan with a minimum of oil. The panko gives great crunch. 
    These were absolutely delish! I didn't have panko breadcrumbs & used crushed croutons and regular saltine crackers instead. I also used olive oil instead but they still turned out yummy!!
    Loved these,adding the pepper flakes gave these more flavor. Didnt have panko so i used cracker crumbs but will try panko next time.Also used caola oil as didnt have peanut oil, but they were delicious.
    Love!! Can you fry these in something other than peanut oil? I have some friends with nut allergies and i'd like to be able to make these when I entertain...

    This recipe was so easy to follow. I used seasoned bread crumbs instead of panko and they turned out FANTASTIC!! My six year old loves zucchini and just got a kick out of helping me make them then dipping them in ranch. This will be my go to recipe for fried zucchini.
    Zucchine was the bomb!!! I couldn't stop eating them, this was my first attempt at making them and they turned out great. Didn't like the dipping sauce at all, I stuck with my homemade ranch.
    This is the best fried zucchini!! My kids don't usually eat zucchini but they actully ate the whole thing. Instead of using zucchini, I used summer squash & instead of planko I used Italian breadcrumbs & I have no complaints. Thank you for such a wonderful treat. Im going to try other items with this recipe.

    This is the best fried zucchini I have had - even the kids were eating zucchini! I used ritz crackers instead of Panko and loved the cool combination of the dipping sauce.

    This was an absolutely fantastic recipe. I am looking for ways to cook zucchini and to master a tempura like coating. I had all the ingredients so that made the recipe a snap and it was so easy to follow. I didn't make the sauce because I was serving this with rice and other Japanese food items. I pulled tomatoes, onions, and zucchini from our garden. The bread crumbs, the parsley and the parmesan cheese were so flavorful - an excellent combination especially for the fresh tomatoes. The green weren't bad either. The onion rings were crispy. All in all, they were nicely coated, fried to a golden brown and were not soggy in the least. Can't wait to make this again! Who'd of thought I would learn tempura from the Neely's!
    This is by far the best fried zucchini recipe I've ever tried. Didn't have fresh parsley on hand so substitued with plenty of dried parsley. I think the key to putting this recipe over the top is to cut your slices quite thick. The Panko browns quickly and if your zucchini is sliced thick enough, they don't get mushy. Also used yellow squash & yellow crookneck along with the zucchini and they all were wonderful! The seasonings in this recipe are perfect.

    Hubby loved this recipe and has told several people about it. Like other reviewers have said, regular ranch dressing is just fine with this, although next time I will try the suggested recipe.

    I make fried zucchini alot during this time of year because of our garden fresh zucchini. I was looking for a little bit of a twist on how I prepare it, and this hit the spot! It was great and my hubby really like it too! Stayed nice and crisp and you can serve it with regular ranch dressing if you don't want to make the dressing.
    Boring! Based on the reviews, I was very excited to make these. But they were quite a disappointment. The breading lacked flavor. I followed to a T, no alterations. My husband & I were both disappointed and wound up throwing the batch away.
    OMG, these were wonderful! Zucchini is like one of my favorite veggies and I like it done anyway, but this recipe is soooo special. I got them all dipped and breaded while I heated up the deep fryer, so frying went quickly. They were so crisp and tasty! I had bought a jar of HVR dip and dressing mix (instead of the single serve packets), so I made the ranch dressing from that and it was perfect with the zucchini. Will definitely make these again and again, especially since I'm adding zucchini to my garden this year! Thanks Pat and Gina for another great recipe! You just keep bringing it!
    Very good recipe; very crisp. Reply to soggy middle. My first batch was also soggy. I sliced thinner and that corrected the problem. I like Parmesan cheese. So, I sprinkled more Parm instead of S & P while still hot. Like others, In addition to the Neely's dip, I offered several other dipping sauces. Hidden Valley Ranch dip was the favorite.
    Made this last night and everyone loved it! Always looking for something to do with zucchini. I didn't make the dipping sauce because I already had a horseradish cream sauce made which complemented the zucchini nicely. Great recipe!
    We loved this. My husband and I have always loved fried zucchini but this was the best I have ever made. This is the first time I have used Panko bread crumbs and we loved them. We will definitely make this again. Your show is great and I watch it every day. Thanks for a lot of good recipes.
    We are always looking for new, flavorful ways to use zucchini when our garden gives us an abundance of it. I don't have a deep fryer, but an electric fry pan set to 350 degrees worked just fine and I was able to make quite a few slices at the same time. This was absolutely delicious, made both the zucchini and the sauce as directed and no need to change a thing. Thanks so much!!!
    These were soo awesome! My neighbor gave me a lot of fresh zucchini, hmmm what to make? There were 968 results for "zucchini"! fortunately I chose the right one. Crispy, and flavorful I used the italian seasoned panko instead of adding the parsley. I had "Ranch" salad dressing already, but chose to offer a marinara dipping sauce also because dinner was spaghetti and meatballs! These were and amazing side, I had some leftover the next day, which were actually STILL crunchy! I decided to reheat them in the oven in a tin pie pan, this proved to make a DEEELICIOUS little lunch for moi! :) Definite keeper, Thank you Neelys! Lookin' at that zucchini gratin for tonite!
    I loved it....I just finished cooking this recipe and the taste was incredible. The zucchini was crunchy and the best tasting vegetable I have eaten in a long time. I will definitely use this recipe for my family and guests.
    I tried frying for the first time when trying out this recipe and the zucchini turned out awesome! I ran out of panko mixture though. My zucchini were really big which was probably the reason for that! The zucchini were really crispy and had a great flavor. I'll definitely make this recipe again.
    This is a great recipe for appetizers or even as a snack with the leftovers the next day they still taste great.that crispy crust and the soft middle ! the best!! especially when served hot out the fryer with the flavorful dipping sauce your family and friends will be impressed if they like zucchni.......
    I made this for my husband. We liked it, but it seemed to be very watery on the inside. Don't know if it was the zucchini but it was good other than that.
    I just made this recipe tonight and it is DELICIOUS!!! I made a tomato basil sauce for Chicken Parm for my husband and myself and the zucchini is delicious with the's how I have it in restaurants but this is way better thanks to the Neely's.
    I've never had fried Zucchini before so this was different for me but they were good.
    This recipe is the best! Although it is similar to my grandmother's recipe I like this one much better.I did add garlic like she does though.My children don't like zucchini but adore this recipe. They especially love the dipping sauce.(They're big fans of spicy foods). I am also a personal chef and do some catering.BIG HIT!! They loved the crunch on the outside and moistness on the inside. I did, however fry them in canola oil to avoid any allergic reactions of guests at the events I cater. AWESOME!
