This recipe was a hit the first time with my kids as well as my husband. Now I'd like my extended family to enjoy it for Thanksgiving.
I thought the kale was a strange ingredient, however it gave such an nice texture and interesting flavor to the simple mashed potatoes.

SUCH a great variation on plain mashed potatoes! The kale adds beautiful color and lots of vitamins and minerals. I usually can't stand kale, but I couldn't get enough Mash BOO-tatoes :

I am so bored with plain mashed potatoes. But this recipes was really terrific & my whole family loved it. I made it with red onions instead of green (didn't have any and curly kale (on sale. I do not normally like kale - it is too bitter. But this is a great way to fix it.

I prepared this recipe for Thanksgiving dinner. Everyone enjoyed it. It's different and easy to prepare. I will be preparing this dish for years to come.

We made this recipe and it was really easy. I used spinach instead of kale. We really enjoyed it. I will keep this recipe on hand and use it often, as my family gets tired of regular mashed potatoes.

This mashed potatoes are really great,I added 1 teaspoon minced garlic and 1\2 lb cream cheese to the recipe.I served it with bbq pork chops and fresh apple sauce.
My family,even the kids liked the mashed potatoes very much.

I really enjoyed this twist on mashed potatoes. Since, I don't care for kale, I used spinach (well dryed in my spinner so as not to get to much juice. I also, used chopped red onions, since, I didn't have the green. But followed the rest of the recipe.
